Another quick fix dinner recipe for all you busy moms out there! Broccoli Fried Rice is so easy that you will not believe me. I promise you, very little chopping needed. This makes it my go to recipe when I need to cook up a meal in a jiffy. Its effortless yet very tasty. The flavors of broccoli really enhance the fried rice giving it an Indo Chinese taste.
1 cup of broccoli florets
1 1/2 cups of cooked rice
2 – 4 tbsp sriracha/chilly sauce
2 tbsp soy sauce
2 tbsp vinegar
Salt as per taste
1/2 cup chopped cilantro
1 tbsp ginger paste
4-5 cloves of garlic, minced
2 tbsp cooking oil
Boil broccoli in water along with little salt for 10 minutes.
Strain it and run it by some cold water. This helps in retaining the color of the broccoli.
In a pan, heat oil, fry the garlic and ginger paste till the raw smell disappears.
Now add the cooked rice and saute for 2-3 minutes.
Add all the sauces along with salt and mix it well.
It is time to add the broccoli.
Mix and cook it all for another 2-3 minutes. Sprinkle cilantro on top.
Mix it together and serve hot. The broccoli is crunchy yet soft and the rice is very flavorful. Truly a quickie when you are most hungry and craving for chinese food! Devour this meal while it lasts.
