Holidays are here, spread the cheer!! I am totally in holiday mood now. Just love this time of the year where everyone is happy, there is less work load, everything is on sale (the main thing), people are not dieting and everyone wants to enjoy food in all its royalty. This makes me very happy! It’s also the time of year when everyone is entertaining someone, be it their colleagues, family, friends or neighbors. Because of which, everyone is on the lookout for interesting and newer recipes. Why? Well, ‘Food’ is the most integral part of a party and yes ‘Drinks’ too! đź™‚
Every time we are at a party or we host one, I have noticed that drinks and appetizers are most popular. Main course and dessert comes much later. Therefore, it is very important to select the right appetizers or finger foods for your guests that teams well with your drinks. Appetizers can be Spicy, salty, sweet, light, dry, rich, hot, cold, and any flavor combination that you can imagine and create. Your spread should be well-balanced. If your appetizer/starters course is designed for a cocktail party and is encouraging your guests to mingle before the main meal, then it should intrigue their palates without overwhelming the main course. It literally means that the appetizer should appeal to the guest’s all 6 senses and make them want to grab one!
Today I have for you one such innovative appetizer recipe which your guests will love. Its made using very few ingredients and easy steps. The prep work can be done before hand and fried later when its time. This finger food is very appetizing, crispy and crunchy. In a mixing bowl add boiled chickpeas (you can use canned chickpeas or boil soaked chickpeas with salt and turmeric powder), bread crumbs, green chillies, minced ginger – garlic, chaat masala, turmeric powder, cilantro, rice flour, pepper powder and salt. Mash the chickpeas lightly with a masher. Then add cooked black rice and mix this mixture well. Keep this mixture in the fridge until its time to fry them.
Serve them hot with Yogurt Mint Dip Sauce. The recipe to make this sauce is super easy. In a bowl, whisk yogurt, add cumin powder, salt, chopped mint leaves and chilly powder. Mix it and serve chilled. This Dip Sauce blends well with the hot and spicy fritters and gives it a cooling after effect. Black rice and semolina give these fritters the required crunch and chickpeas make it a very hearty appetizer. This protein rich snack is very addictive and lip smacking.

- For the Fritters
- 1 cup boiled chickpeas
- 1/2 cup cooked black rice
- 1/2 cup bread crumbs
- 3-4 green chillies
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 1 tsp chaat masala
- 1 tsp turmeric powder
- 1/2 cup cilantro
- 2 tbsp rice flour
- 1 tsp pepper powder
- Salt as required
- Oil for frying
- Semolina as required
- Yogurt Mint Dip Sauce
- 1 cup yogurt
- 1 tsp cumin powder
- 1/2 tsp chilly powder
- 5-6 mint leaves
- Salt as required
- In aÂ mixing bowlÂ add boiledÂ chickpeasÂ (you can useÂ canned chickpeasÂ or boil soaked chickpeas with salt andÂ turmeric powder),Â bread crumbs, green chillies, minced ginger - garlic,Â chaat masala,Â turmeric powder, cilantro,Â rice flour,Â pepper powderÂ and salt. Mash the chickpeas lightly with aÂ masher. Then add cookedÂ black riceÂ andÂ mix this mixture well. Keep this mixture in the fridge until its time to fry them.
- Shape it into medium size balls, roll them overÂ semolina, flatten it lightly and then fry them in hotÂ oil. Fry them till they turn golden. Strain them out inÂ paper towels.
- Serve them hot with Yogurt Mint Dip Sauce. The recipe to make this sauce is super easy. In aÂ bowl,Â whiskÂ yogurt, addÂ cumin powder, salt, chopped mint leaves andÂ chilly powder. Mix it and serve chilled. This Dip Sauce blends well with the hot and spicy fritters and gives it a cooling after effect. Black rice and semolina give these fritters the required crunch and chickpeas make it a very hearty appetizer.
- You can also serve them with chutney or ketchup.
The addition of black rice in this recipe gives it a boost and a different flavor. I have become a fan of this wonder rice and have used it in many different recipes.
