    What to cook on a weeknight

    But let me tell you that this is totally possible without breaking into a sweat. You just need to plan and work smarter in some ways.

    Here are a few tips that have always helped me.

    • When doing your weekly groceries, pick up some basic staples which will not just stay good for a week but can be used to make a variety of dishes.
    • Different spice mixes like cumin powder, paprika, mixed herbs, peppercorns, etc.
    • Other ingredients like jalapenos, tomatoes, onions, garlic, and ginger are a must-have in your shopping cart.
    • Stock up on oil, seeds, lentils, legumes, grains, pasta, and flour as well. 
    • You will only need to buy veggies and fruits based on your weekly menu.

    Of course, your fridge and pantry staples can be customized based on your family's needs.

    But once you have all these things in your pantry and in your fridge, you will always be able to cook up a spontaneous meal, even on your busiest days.

    When you commit to keeping this core supply of food on hand, you will even find your weekly shopping easier and faster.

    This simplified way of cooking will save you some money too.

    Now the next time you hear, "What's for dinner?" you can smile, because you'll know you have fresh, delicious options ready to make a meal from scratch.

    I always recommend a cooking plan that is based on letting the taste of natural, good-for-you ingredients shine without using processed or artificial flavor enhancers.

    Meals like these can be enjoyed when the time is short and the budget is tight.

    I like to keep our weeknight meals loaded with veggies, low in fat, and have a fair amount of nutrients like protein, carbs, and, vitamins.

    Why make this 

    I love these veggie noodles inspired by Thai cuisine because it immediately satisfies my noodle cravings and is lightning fast to make!

    These vegan noodles can be made using a variety of veggies, which makes them 100% customizable, nourishing, and tasty.

    Adding some vegan protein like tofu elevates the flavor even more. Tofu is a complete protein made from compressed soy-milk curds.

    It is also high in fortified calcium and other key minerals but relatively low in calories, making it a nutrient-dense food and a great choice for these flavorful noodles.

    Ingredients needed

    • Noodles - You can use any noodle variety.
    • Vegan Thai sauce - If you Thai food but don't know which vegan Thai sauce to buy?
      • I found vegan Thai sauce at Sprouts Market and that is what I have used in this recipe today.
      • The brand is called World Foods Thai Red Curry Paste. You can check it out at other stores as well. 
    • Tofu - I have used Garlic & Herb Toss’ables from Nasoya in this recipe. These tofu cubes are ready to use. You can use regular extra-firm tofu instead. 
    • Thai red chili - Also known as Bird's Eye chili is one of the spiciest chili ever. 
    • Veggies - use whatever is available to you. 
    • Other basic ingredients - garlic, spring onions and, basil. 

    Here's how to make it

    This is a vegan noodles recipe from Thai cuisine that you won’t be able to stop eating!

    It's a spicy, crunchy, and tangy noodle dish. It’s yummy! I have used Garlic & Herb Toss’ables from Nasoya in this recipe.

    These tofu cubes are ready to use. If this is unavailable to you, then cut extra-firm tofu in cubes and grill it evenly on both sides using a grill pan or in the oven.

    You can even marinate it before if you want. 

    1. The first step is to boil the noodles as per the instructions on the packet. Strain and keep it aside for now.
    2. Heat oil in a wok. Fry chopped garlic, thin slices of Thai red chili (Bird's Eye chili), and chopped spring onions on high heat for a minute.
    3. Then add chopped mushrooms and torn basil leaves. Cook this for 3-4 minutes or until the mushrooms are cooked.
    4. Then add marinated & grilled tofu cubes to the wok along with chopped bell peppers. Continue to saute the veggies and tofu for 2 more minutes.
    5. Then add vegetarian Red Thai Curry Sauce to the wok. Mix it and continue to cook it for another minute.
    6. Next, add the cooked noodles to the wok. Lightly toss it all together. Check the seasoning and add salt and pepper as per your taste.
      • You don't need to cook it for long, just lightly toss it all together and take it off the flame.

    Make and serve these Asian Style Thai Basil Tofu Veggie Noodles for a weeknight dinner or for a weekend brunch! It's super delicious. 

    Top tips, recommendations, and suggestions

    You can use any noodle variety to make this Asian bowl - udon, flat noodles, rice noodles, ramen, etc. Also, since it's a customizable recipe, you can add or skip any veggies you want.

    Try and add some protein to your meal and for that, instead of tofu, you can use paneer or edamame.

    I used World Foods Thai Red Curry Paste which is a vegan Thai sauce in this recipe. So if you are a fan of Thai cuisine, do check out your local grocery stores for this Thai sauce.
