Summer Time Grilling!
I'm so excited about a long July 4th weekend of grilling, aren't you? I have always wanted to experience outdoor grilling but back in India, I never really got that opportunity to do so. I have had grilled food there but only in restaurants. My first experience with actual grilling was at a friend's house here in the US where we all grilled marshmallows for the children and veggies for the adults! I know friends here who have an annual tradition in their homes where the parents along with their children enjoy a BBQ evening in their backyard every summer! I too have always wanted to come up with some kind of a tradition around the barbecue! It looks like, this year my wish is coming true. Ever since the onset of Summer, we have been in our backyard, grilling a variety of foods like corn, potatoes, and marshmallows every chance we get! We are into it so much that we are seriously thinking of making a full summer kitchen next summer!
What is Dabeli?
Today I have a fusion recipe of sorts for you! Its called Grilled Dabeli Pita Bread Pizza! It's a fusion dish in the true sense because Dabeli is an Indian dish, Pizza is Italian and Pita is the Mediterranean! For those who don't know what Dabeli is, let me explain. It is a spicy snack food that originated from Kutch, Gujarat (a state of India) but very well popular across India. It is usually served during breakfast and for evening snacks. It's prepared by mixing mashed potatoes with a special Dabeli masala, that can be either homemade or store-bought, along with other Indian spices and masala peanuts. This potato mixture is stuffed in a pav/bread and served. Dabeli means “pressed” in the Gujarati language. That's because the pav is stuffed with this spicy potato mixture, pressed and heated on a pan before serving. The bread is also smeared with a variety of chutneys to make it more palatable. If you are an Indian, you would have surely had Dabeli but if you are not, then I suggest you either try it out when you visit an Indian restaurant/grocery store. This Dabeli mixture is a great alternative to simple, plain mashed potatoes. Also, you can prepare this mixture in advance (before a party) and make fresh and hot Dabeli once your guests arrive. How to make Grilled Dabeli Pita Bread Pizza?
Don't forget to pick up Stubb’s® Bar-B-Q Sauce and French’s Classic Yellow Mustard at your local Walmart store for all your summer grilling solutions! Now coming back to this fusion dish, here is how you can make Grilled Dabeli (made With Potatoes & Beets) Pita Bread Pizza at home this summer! The first step is to prepare the potato mixture. Since I was in the mood to experiment, I also added beets to the mix but you can make this with just potatoes. Boil the potatoes and beets in salt + turmeric water until they are cooked. Peel and mash them nicely once done. Heat oil in a pan, add chopped onions and a pinch of salt. Saute until they turn translucent. Then add the Dabeli masala, peanuts, and some chilly garlic paste to the pan. Continue to saute for 3-4 minutes. Once the oil separates, add the potato-beets mash, tamarind paste, pomegranate powder, and salt. Mix it all together and cook for about 2 minutes. Lastly, garnish with red grapes and chopped cilantro. Give it a final mix. The Dabeli mixture is now ready.
Now it's time to bring out the grill. Take the mini pita bread, brush them with oil, and grill them until they are done to your preference. Meanwhile, mix Stubb's Original Bar-B-Q Sauce and French’s Classic Yellow Mustard in a bowl. Once the pita bread is grilled, smear it with this prepared sauce. Then spread the prepared Dabeli mixture all over the bread. Sprinkle sliced onions and Cotija cheese over it. Grilled Dabeli Pita Bread Pizza is ready! Just serve! You can make this for family brunch, get-togethers, or backyard parties! This will also make a great camping recipe. You can prepare the potato beets mixture at home and pack it in a box. Grill the pita bread out in nature and enjoy this pita pizza out in the open. Grilled Dabeli (Made With Potatoes & Beets) Pita Bread Pizza
Equipment
Ingredients
To prepare the Potato - Beets Mixture
- 2 Potatoes
- 2 Beetroot
- 1 tsp turmeric
- salt as required
- water to boil
- 1 tbsp cooking oil
- 1 onion, finely chopped
- 5 tbsp Dabeli masala
- 1/4 cup roasted peanuts
- 3 tbsp chilly garlic paste
- 1 tbsp tamarind paste
- 2 tsp pomegranate powder
- 10-12 red grapes, cut in half
- cilantro for garnish
- salt as required
To prepare the Sauce spread
- 4 tbsp Stubb's Original Bar-B-Q Sauce
- 2 tbsp French’s Classic Yellow Mustard
To grill Pita bread
- 10-12 mini pita bread
- cooking oil for grilling
To assemble the Dabeli Pita Bread Pizza
- 1 onion, sliced
- 1/2 cup cojita cheese crumbles
- cilantro for garnish optional
- 2-3 tbsp thin sev for garnish optional
Instructions
To prepare the Potato - Beets Mixture
- Boil potatoes and beets in salt + turmeric water until they are cooked.
- Peel and mash them nicely once done.
- Heat oil in a pan, add chopped onions and a pinch of salt. Saute till they turn translucent.
- Then add dabeli masala, peanuts and chilly garlic paste to the pan. Continue to saute for 3-4 minutes.
- Once the oil separates, add the potato beets mash, tamarind paste, pomegranate powder and salt. Mix it all together and cook for around 2 minutes.
- Lastly garnish it with red grapes and chopped cilantro. Give it a final mix. Dabeli mixture is now ready.
To prepare the Sauce spread
- Mix Stubb's Original Bar-B-Q Sauce and French’s Classic Yellow Mustard in a bowl. Keep this aside for now.
To grill Pita bread
- Take the mini pita breads, brush them with oil.
- Grill them over a grill on both sides until they are done to your preference.
To assemble the Dabeli Pita Bread Pizza
- Smear the grilled pita bread with the prepared sauce.
- Spread the prepared Dabeli mixture evenly all over the bread.
- Sprinkle sliced onions and Cotija cheese over it. Grilled Dabeli Pita Bread Pizza is ready! Just serve!
