I enjoy watching live cooking at restaurants as it makes the experience of dining very interactive and interesting. We had been to a Mexican restaurant recently where the server prepared fresh guacamole for us by the table-side and what a sight it was! I even did a Instagram live video to show it to all. The energy of that place was intoxicating and the music helped to keep our spirits high along with their specially crafted cocktails. I draw my inspiration from everything around me and try to adapt a thing or two from around me when I cook. Like, I enjoy listening to some foot tapping music while I cook, maybe even do a little dance here and there while I chop or stir. This makes my cooking experience less stressful and more fun just like at a restaurant. Plus I have noticed that the food always turns out great when cooked in a good mood! You agree too right? KR can always tell in the first bite whether it has been a happy or a sad day for me! It simply reflects on our food.
The other thing I enjoy is cooking with breads. Either baking it myself or heading over to my nearest bakery to pick up some freshly baked bread. But the problem with freshly baked bread is that it stays good only for a short duration but I guess that is a good problem to have rather than consuming processed food which never perishes. I discovered Bagels 5 years ago. It was when I moved here to the US that I had my first Bagel Egg Sandwich. Ever since, I cannot pass a Bagel and not have it. So you can imagine my happiness when I got to know that Costco always sold 2 bagel packets for the price of one. My trips to Costco is incomplete without these yummy bagels in my cart. I have tried all the varieties they have and love each one of it. I secretly hope they never stop this promotion. I planned on making Guacamole Bagel Sliders for KR since he LOVES avocado sandwich. A friend of ours made it for him and he has been begging me to make it for him ever since. It was long due plus I had bagels from my last trip to Costco.
The recipe to make Guacamole Bagel Sliders is pretty straightforward and can be easily made by any novice person. First step is make the guacamole. You need ripe avocados for this recipe. It should be soft when you press it and not hard. Cut the avocados and transfer them to a bowl
. With a fork
, mash them well. Chop onions and soak them in water for 10 minutes. This reduces the rawness of onions. Cut and de-seed the tomatoes from the center. Then finely chop them. Mince green chillies. Add the tomatoes and green chillies to the bowl of mashed avocado. Strain the onions and transfer them to the bowl as well. Then add the roasted cumin powder, salt, chopped cilantro and lime juice
to the bowl. Give it a good mix and Guacamole is ready!
Cut a bagel in half and warmly toast it. I just love my 4-1 toaster
as it saves me so much time especially in the mornings and when there are more mouths to feed! Spread cream cheese
over it. Then spread guacamole generously over it, sprinkle dried herbs and then enjoy these delicious Guacamole Bagel Sliders. You can even top it with a cheese slice for more cheesy flavor. These sliders tastes great even with chutney/ketchup
. They can be served for breakfast or as a snack. KR had it for breakfast and now wants to have this everyday! He loved it, the only thing he told me was to make the guacamole more spicy the next time to suit his taste. Homemade guacamole is so delicious and healthy plus it’s quick and easy to make. Ingredients
- 3 avocados
- 1 onion
- 2 tomatoes
- 2-3 green chillies
- 1 tbsp cumin powder
- 1/2 cup chopped cilantro
- 1-2 tbsp lime juice
- 2 bagels
- cream cheese as required
- salt as required
- dried herbs as required optional
- cheese slice optional
