Mashed Potatoes is a classic side dish. It is very versatile and can be used in almost all cuisines. However Mashed Cauliflower is a healthier option to Mashed Potatoes. I have been wanting to make this dish for awhile now. Just the other day after making Cauliflower and Black Rice Fritters, I had some leftover cauliflower in the fridge. I was saving it to make cauliflower rice but today since I was making Tacos and had no cream sauce I decided to make some mashed cauliflower instead, to go with Tacos. Since I love the flavor of cilantro and garlic, plus the fact that cilantro was the only herb available, I decided to add them while making my Mashed Cauliflower.
It is a fairly simple recipe and is ready within minutes. Since its flavored, it gives an additional zing to the dish. You can use any other herbs in this recipe like chives or dill. Each one will taste different. So whatever is your occasion – entertaining guests, sleepovers, play dates, family meals or just a regular Monday lunch, this dish is the perfect for the sides.
2 cups of cauliflower florets
2 garlic cloves
1 tbsp fat free/regular sour cream
1 tsp olive oil
1 tsp pepper powder
1/3 cup of cilantro stalks
Salt as required
Wash the florets and boil them in water with little salt for 10 – 12 minutes.
Once done, drain out the water. The florets would have softened by now.
I prefer blending this in a food processor like this one I have – Cuisinart 11 cup Food Processor. It makes life simpler. Put these florets into the processor. Add all the other ingredients to it except the cilantro stalks.
Pulse it for a few minutes.
And keep pulsing till you feel that it has reached the desired consistency.
Take it out into a bowl.
Separate the stalk from the cilantro leaves.
Chop them very finely and sprinkle them over the mashed cauliflower. Give it a light mix. This is little creamier and softer than potatoes.
