Achari Dahi Bhindi is a delicious and authentic Indian gravy where the okra/bhindi is cooked with pickle, yogurt and spices. Serve it with Indian bread/rice.
This one is once again one of my mom’s recipes. As all moms are, my mom too is a great cook who takes a lot of pride and keen interest in her cooking. Having had the privilege of just watching her cook everyday, there are a lot of nuances in cooking that I have picked up. The way she combines different ingredients together, the way she uses her fingers to measure, her own ways of testing a dish to see if its done, how she always perfects the salt balance in any dish and using leftovers to create a whole new dish altogether! These are just some tricks of the trade that I have learnt from her.
Dahi Bhindi is my take on Dahi Baingan. My mom would make Achari Bhindi which is nothing but adding hot and spicy pickle in the okra curry to give it that required punch. Many days ago, I had prepared Dahi Baingan and had loved the addition of yogurt in this curry. While I was craving to recreate my mom’s dish, I gave it my little touch by adding yogurt in it. As South Indians, we all love our Curd Rice and till today, I like to mix curd rice with the curry of the day and some mango pickle. This Achari Dahi Bhindi reminded me of that meal. It had all the components minus the rice. Yum!
Here is the detailed recipe. Wash and chop okra and saute it in oil along with garlic powder till the stickiness of okra goes away and they are cooked. Take it off in a plate
. In the same pan
, heat oil, temper mustard seeds
and cumin seeds
. Once they crackle, add the minced garlic, ginger and finely chopped onions. Saute till the onions turn translucent and then add the finely chopped tomatoes.
Continue to cook it till the tomatoes turn mushy. Now add coriander-cumin powder and mango pickle. Give it all a good mix and saute for 2-3 minutes. Then add the whisked
yogurt. Bring the mixture to a boil and then add the sauteed okra. Check and add salt as the pickle already contains a high amount of salt. I didn’t need to add salt at all.
Garnish with chopped cilantro and serve it warm. This is a one pot meal that you can make for main course or even pack it in lunch boxes along with some Indian bread. It’s spicy, tangy and lip smacking. I was literally licking it off my fingers when I made this for our weeknight dinner! KR loved it too and has asked me to repeat this dish again. All in all, this Indian vegetarian curry is worth the time and effort. A firecracker recipe using just few ingredients! My mom is surely going to be proud of this dish.

- 2 to matoes
- 1 tbsp coriander cumin powder
- 2 tbsp mango pickle
- 1 cup yogurt
- Cilantro for garnish
- Salt as needed
