For someone who recently discovered Polenta, I am falling in love with it! When Ancient Harvest reached out to me asking if I could try cooking something with Polenta, I must admit that I had to google it first. In the recent times, this is the only ingredient that was totally alien to me. I had never heard of nor seen not tasted it. They sent me a couple of flavors over for testing. Polenta is a traditional Italian dish made from ground cornmeal. It's best compared to American grits. While Grits are traditionally made from dent corn, polenta is made from flint corn. This gives grits a slightly mushier texture, while polenta is known for its coarseness. I also discovered that they are extremely nutritious. They are low in calories, is vegan, gluten free, rich in vitamins and minerals. Since I had prepared an appetizer with it before, I wanted to try cooking something very different with it. That is why I thought of making a quick stir-fry!
Having friends who also travel is a great bonus! Why? Because wherever they travel, you end up getting souvenirs. Now that all of them know that only food related gifts excite me, they know what to get. It's either some local quirky photo props or some local spices. That is how I landed upon a pouch full of Iranian spices. It's aromatic and lends a very new flavor to the dish. I had used it once to make my Dal and now I decided to make Polenta stir-fry using Iranian spice. Since its a small pouch, I want to use it sparingly till I get it refilled or learn to make it at home.
For this recipe, I have used the heat and eat Polenta by Ancient Harvest. This is easily available at all leading grocery stores like Publix, Walmart, Trader Joes, etc. So the first step is to cook the polenta. Open the package and slice polenta. Grill them in a pan using little oil. Once done, cut them in small bite sized pieces. Heat oil in a pan. Add and fry minced garlic and chopped onion till the onions turn translucent. Then add the Iranian spice mix, curry powder, salt, pepper, turmeric powder and cinnamon powder. Mix and fry for 2 minutes. Then add the chopped polenta, chopped cilantro and saffron. Give it a good mix and serve immediately.
