Vegetable Jalfrezi is a popular North Indian dish cooked restaurant style. It’s an Indian style Stir Fry Veggies!
The word Jalfrezi has been originated from “Jhalphrize” which mainly means spicy food cooked on high flame. This is a popular North Indian dish where different veggies are stir fried with Indian spices to make a top quality restaurant style meal. Whenever I think of this dish, I cannot help but remember my one crazy friend. She is really crazy and weird but then so am I. Maybe that is why we became besties. There are some particular quirks that I associate with her. She never answers her phone, she is always late, her excuses are always mysterious and at a restaurant, she always orders Vegetable Jalfrezi!
Did I mention that she is nearly ten years younger to me but way more mature than I am. She is ten thousand time prettier and cute. I love her to bits and she plays an integral part in my life. While I know everything about her, I just fail to understand her love or fascination for the same every time. I tease her that there are other things on the menu which she can order once awhile. But its of no use. She only orders Vegetable Jalfrezi. I am so bored of it. Life is funnily ironic though. All these years, I have been irked by this dish only to make it today for my blog. Actually I miss her so much that I made this in her remembrance. She is miles away from me and I don’t even know when I will see her next. Making this dish today was my way of connecting with her virtually.
When she got to know that I made this dish, she made me promise her that I will make it again for her whenever I am in Bombay next. I of course happily obliged and plan on making it for her very soon. More than making it for her, I would just love to see her. It has been nearly four years now and that is really long. 🙁 Now let me tell you something more about this recipe. This stir fry veggie dish makes a great side to serve with any Indian bread like naan, roti or even whole wheat bread. It’s a little dry curry and extremely flavorful. The Indian spices used here help make this dish a well-balanced meal. The simplicity of the dish also makes it a preferred meal option on a weeknight or weekdays.
To get this look of this vegetable gravy dish, you need to cut all the veggies into strips. Heat oil in a pan
just enough for shallow frying. Fry the paneer strips till they turn golden. Take them out on a paper towel
to soak in the excess oil. Follow the same process with mushrooms, baby corn and bell peppers. Add little salt and garlic powder
while frying these veggies to give it an extra zing and fry in on high flame. Be careful to not burn the veggies. In the same pan, heat oil. Saute ginger, garlic and sliced onions for 2 minutes or till the onions turn translucent.
Now add the tomatoes and saute till they are soft and mushy. Then add the dry spices like turmeric powder, garam masala, chilly powder, dhania jeera powder, kasoori methi
, salt and sugar
. Mix and saute for a minute or till the oil starts to separate. Now its time to add all the stir fried veggies. Mix them well. so that the masala gets coated to all the veggies.
Garnish with chopped cilantro and serve hot. Veetable Jalfrezi is now ready to gorge upon. I would like to dedicate the first bite to my bestie and silently wish that i get to feed her this dish very soon.
Let me assure you that this tastes exactly like the one you would have in a restaurant. So yes, it is a fool-proof recipe and you can make this for dinner even on a week night. It is that simple and filled with flavors and has a little bit of all the tastes – sweet, spicy, sour, pungent and salty. Dinners are way more exciting when the spread looks like this.
Ingredients
- 1 cup paneer cut in strips
- 1 Bell Pepper cut in strips
- 1 cup baby corn cut in half
- 1 cup mushroom
- Salt as required
