I have always heard my working friends complain that they do not get time to cook a decent meal after a long tiring day at work plus managing kids and a spouse. They always are in awe of me that I cook up exotic dishes while they have to settle for the regular food. In my defense, I do tell them that my recipes though may look all exotic but are very easy to make and not time-consuming. Inherently I am a lazy person, so I do not like making recipes which are very elaborate and have too many processes. So I can assure all my readers that my recipes are not at all difficult to make and can be made even after a busy day. All you need is passion for cooking.

So when my friend asked me to suggest her a recipe to make, I thought why not share a recipe for all working individuals who seek quick fix meals for their family. Hence my today’s post is dedicated to all working professionals. Vegetable Stir Fry is the most simplest recipe you will every find. The fact that this can be had for lunch/dinner makes it even more appealing. Personally, I love the flavor of grilled veggies. You can play around with the ingredients in this recipe depending on what you have at the moment. The sauce that I have used in this recipe is the same as used in Sriracha Paneer. Its yummy!

This dish is so colorful because of the veggies used and nutritious as well. I have also made Eggplant and Tofu stir fry in Hoisin sauce in the past which was very well received by all. I really feel stir fries are the way to go cause they are simple, quick and tasty. Without much ado, let me share my recipe with all of you. Ingredients

1 cup bell peppers

1 cup paneer cubes

1 cup broccoli

1 onion cut in rings

1 cup mushrooms

1/2 cup green peas

6-7 tsp of garlic powderVegetable Stir FryCurries & Gravies

Salt

Cooking Oil as required

Sauce – Refer Sriracha Paneer recipe

Method

Grill all the veggies one by one on the grill pan. I use this – Grill Pan which I just love! Add a tsp of garlic powder and salt along with little oil as you grill each vegetable. Grill them evenly till they get a charred look.

Prepare the sauce as per the recipe mentioned in Sriracha Paneer. In a mixing bowl, add all the grilled veggies and the sauce. Mix them well together. Check and add salt if required. Serve this with rice. This dish is crunch and very flavorful. Surely worth a try!
