Chocolate Popcorn Peanut Butter Truffles can be made with just a few ingredients plus they are very easy to whip up. They make the perfect treat for your loved ones, or to give away as gifts. They are delicious bites of smooth peanut butter cheesecake loaded with popcorn & covered in a crunchy chocolate shell. Yum!
KR has been very stressed at work lately. There is lots on his plate and he hardly gets time off these days. Coming home to good food is what brightens his evening and then unwinding for some time in our newly done movie room de-stresses him. Yes, we just did our movie room, painted the walls ourselves, put up new blackout curtains, projector and movie themed props to finish the look of the room. That too took a toll on both of us as it was a pretty exhaustive DIY project. But I must add that it was totally worth it! That room has become our go-to place to unwind and relax after a long tiring day. Be it watching a movie on the big screen or binge watching some series on Netflix or Amazon Prime, it just makes the whole experience enthralling.
It was also our 5th wedding anniversary and given the fact that KR was having a tough schedule at work front, I wanted to surprise him with a dessert made using his most favorite thing ever – Peanut Butter! There was some leftover popcorn in my pantry (Yes, I do that intentionally for days like these) which I wanted to use in this recipe along with oats. I was positive that my Chocolate truffles flavored with creamy peanut butter and crunchy popcorn would immediately put a huge smile on KR’s face and lift his spirits and that is exactly what it did. He came home with a splitting headache and told him to simply close his eyes as I popped one truffle into his mouth. He being him, immediately started telling me what he could taste. He recognized peanut butter and chocolate of course and then with a hint of surprise in his tone mentioned popcorn! He was pleasantly surprised that I had used popcorn in this dessert. He LOVED these truffles and was just glad that I had made it for him.
I myself was impressed with this no-cook/no-bake recipe that is ridiculously easy to prepare. This recipe was given to me by my friend who makes this all the time for her daughter. She is a great cook and I can always rely on her for some tried and tested unique recipes. In a bowl add popcorn (leftover or freshly prepared) and oats. In another bowl add peanut butter and honey. Microwave it for 30 seconds. Mix it and pour this creamy sauce over the popcorn. Transfer the mixture to a lined loaf pan and press it firmly. Then let it set in the refrigerator for 30 minutes at least. Take it out and transfer it back to the bowl and pour melted dark chocolate sauce and olive oil. This will give these truffles a nice glaze. Mix it well. Shape them into small-sized balls by pressing them hard enough.
Again transfer it to a baking tray to set it in the refrigerator again for 30 minutes. Once firm, you can they relish these mouth-watering Chocolate Popcorn Peanut Butter Truffles! They make a great pick-me-up snack or on a date night dessert. You can also serve these for your child’s birthday party and watch your child’s friends go crazy devouring it. These are a great choice if making it for a special occasion like I did and surprise your loved ones with this delectable sweet treat. I can totally see it become a party favorite. The chocolate and peanut butter will melt in your mouth and the popcorn will keep you busy. I think this is a great way of enjoying leftover popcorn in a dessert form.
