"I will always have cookies for you!" It's a quote from F.R.I.E.N.D.S. I love watching reruns of this world-famous sitcom on Netflix. When Monica says this line to her brother's newborn child, it always gives me goosebumps. I can totally relate to that feeling and I am looking forward to the day I get to hold my brother's baby. While I do not know when that would happen, I do know what I would first say to the baby, "I love you so much that I will always have cookies for you!" Well if that is the case, I better start honing my cookie making skills so that I have a variety of cookie recipes for the kid to choose from. Well I know it's a far thought right now, but it never hurts to plan in advance. After all, I am known for my quirkiness!
But yes, I have never baked a cookie until today. It has always been on my mind but never on my menu somehow. So it was about time I made one and also at the right time. My close friends are away for a conference while their kids are here back home with their grandmother. While my friend is constantly missing her kids, I decided to pay them a visit with some cookies. At first I had planned to buy it from Publix on my way to their house but then it occurred to me that I am a food blogger and I should bake them myself, not buy. Her son is one smart 6-year-old who loves going through my Instagram page and looking at all the pictures. He loves to hear my travel stories, has been my official taster for Chocolate Modak, Mango Semolina Cupcakes and Kumquat Strawberry Popsicle. He has now demanded that I make a watermelon popsicle for him next. He is a sweetheart and so is his younger sister. I wanted to bake something special for them.
So it was decided that I am going to bake cookies today but as luck would have it, I didn't really have any good ingredients to make (at least that is what I thought). As I rummaged through my pantry, I found half a bottle of almond butter which I had got from the local market. I normally make my own Almond Butter, but when I saw this freshly made butter in the store, I couldn't resist. I use it in my smoothies or to make Mug Cakes. But I had seemed to have forgotten about this butter until now. I thought of using this as my main ingredient to make cookies. Then I picked up some other ingredients from here and there and viola..my recipe was ready!
Warm milk (if not vegan) or water (if vegan) and add instant coffee powder in to. Mix it till it dissolves and add to the oats mixture. Then add chocolate syrup, mix and knead to make a dough. Do not knead too much, just till a big ball shape is formed. The almond butter will release its oil and help in the process. Line a cookie tray with parchment paper. Shape them into small balls, flatten them lightly and create an impression using a fork. Place them at a distance on the cookie tray. Preheat the oven at 350 degrees F. Place the tray on the top rack and bake for 8-9 minutes.
The cookies will appear not done, but that is fine. Take them out and let it rest for 10 minutes. Then you may start eating it. Of course I saved some for KR as well else he would sulk big time. 🙂
That is my idea of enjoying a dessert. Sharing it with people around and help spread happiness. Everyone loves something sweet occasionally and what better than cookies. As expected the kids loved it too. Both of them immediately dunked down 2 cookies each once they finished their dinner. Their grandma was surely happy with that and so was I . The best part was, the little boy asked me to take a picture of himself with the cookie and told me to share it on social media! Kids these days are so smart and observant. It amazes me.
Eggless Almond Butter Oats Cookies
- 3/4 cup almond butter
- 3/4 cup oats powder
- 1/4 tsp salt
- 3/4 tsp baking soda
- 1/4 cup brown sugar
- 1 tbsp milk/water
- 2 tsp instant coffee powder
- 1 tbsp chocolate syrup
- In a mixing bowl, whisk almond butter to soften it. Then add powdered oats, salt and baking soda. Whisk them together. Then add the brown sugar. Continue to whisk it.
