2017 is here and I cannot be more excited! There are a lot of new and exciting things we as a family are looking forward to. One of the main resolutions we plan on sticking to is to stay fit and healthy. While we enjoy our exercise regime at Orange Theory as a couple, both of us are equally involved in our meal planning for the week. Usually over the weekend, we discuss our next week's menu and do the groceries together. For me, grocery shopping is not a chore, I enjoy it because cooking is my passion and I love be as involved as possible. In fact, my trips to the grocery store has helped me in creating newer recipes with new and different ingredients. Weekday meals are largely healthy and protein rich, keeping in mind our workout routine. We splurge on weekends!
We are serious breakfast eaters and never miss the first meal of the day, come what may. Normally I am very lazy in the morning to cook something elaborate, plus I have to focus on my Facebook promotions and other blog related work during that time. Therefore I always look for an easy way out when in my kitchen without really compromising on our health. Most days, I prepare fruit smoothies for both of us which is not just nutritious because it's filled with the goodness of fruits, calcium and protein but lip smacking too. On other days, we prefer having milk with cereal. But, we are also those kind of people who get bored with routine easily. We want something new for the palate after few repetitions. Hence I am always on the lookout for easy, delicious and healthy breakfast recipes.

That was my idea behind creating this delicious frozen treat. I wanted to change the way we have been having breakfast. I planned on serving an ice cream for breakfast! There was something else which had inspired me to make it. I occasionally volunteer at Give Kids The World besides being a Make-A-Wish volunteer. At Give Kids The World, they serve ice creams for breakfast and that is one of their USP. I have loved this idea ever since I heard of it and this seemed like a right time to try it for myself. After all, it is a new year. Since the whole idea was to keep it healthy, I wanted to mainly use natural ingredients like whole fruits. Adding cereal to it will make it more crunchy, nutritious and delicious.
This was also an excuse for me to use my brand new Ice Cream Maker. I was super excited. Beetroot and mangoes make a great combo! In a pan, add mango puree and mango butter. Whisk it together and bring it to a boil. Take it off the flame. In a bowl, add Great Grains® cereal and pour the mango mixture over it. Mix and keep this aside for now.
Wash the same pan and reuse it again. Melt butter and then add the homemade Beetroot Raspberry Sauce. Whisk it similarly like you did for the mango mixture. Bring to a boil and take it off the flame. In another bowl add the Great Grains® cereal and pour this beetroot mixture over it. Mix and add the mango mixture to it. Pour the contents into the ice cream maker bowl and follow the maker's instruction to make the ice cream.
As you can see, this recipe is vegan, diary free, uses no heavy cream, no added sugar and in fact, requires very few ingredients to make it. Having the ice cream maker, makes the job seem so effortless. It was KR's gift to me this Thanksgiving and I am extremely thankful to him for the same. I now cannot wait to try out more interesting ice creams and frozen yogurt recipes with it.
Great Grains Cereal, Mango and Beetroot Frozen Treats!
- For Mango Mixture
- 2 cups mango pulp/puree
- 2 tbsp mango butter
- 1 cup Great Grains® cereal
- For the Beetroot mixture
- 2 cups Beetroot & raspberry sauce Refer Rabri recipe for the sauce recipe
- Half inch vegan butter stick
- 1 cup Great Grains® cereal
- Ice Cream Maker
- Great Grains® cereal as required for garnish
- In a pan, add mango puree and mango butter. Whisk it together and bring it to a boil. Take it off the flame. In a bowl, add Great Grains® cereal and pour the mango mixture over it. Mix and keep this aside for now.
- Wash the same pan and reuse it again. Melt butter and then add the homemade Beetroot Raspberry Sauce. Whisk it similarly like you did for the mango mixture. Bring to a boil and take it off the flame. In another bowl add the Great Grains® cereal and pour this beetroot mixture over it. Mix and add the mango mixture to it. Pour the contents into the ice cream maker bowl and follow the maker's instruction to make the ice cream.
- Transfer the contents to a container and freeze it for at least 5 hours. Serve in glasses using an ice cream scoop. Garnish with crushed Great Grains® cereal on top and serve chilled.
As far as our breakfast is concerned, both of us cannot be more happier. We are getting to enjoy an ice cream for breakfast which also has cereal in it in a way no one can imagine. It has the goodness of beets, mango and raspberries. An unusual combination sometimes seems to provide exceptional results when it comes to matter of food. I am thankful to Great Grains® cereal for having provided me an opportunity to experiment with the way I look at breakfast and ice creams!
