Ferrero Rocher and Raspberry Ice Cream is a straight forward ice cream recipe that doesn’t require an ice cream maker. A great way to use Ferraro Rocher chocolates that you received this holiday season. Chop and mix them with delicious frozen raspberries to prepare this lip smacking frozen treat!
Ice cream is one weakness that nearly everyone has! Growing up, it never really occurred to me that one can make ice cream at home because no one we knew owned an ice cream maker. Then one day all of sudden my mom served homemade ice cream to us as we got back from school. That earmarked the beginning of homemade ice creams in our household. You see, my mom had joined a local cooking class along with her neighborhood friends and that is where she had learnt some great no-churn ice cream recipes. We were simply happy to be her testers when she came back from her class and prepared it for us. Over time, she began experimenting with flavors which was great and my dad would joke around that we could start our very own ice cream truck if is how its going!
Till I moved here to the US, I had never even heard about an ice cream maker! Naturally when I did, I was intrigued. Suddenly it opened up so many possibilities. I so wish my mom was around to try this technique of making ice creams, she would have been thrilled. This time when I went to Bombay to celebrate the birth of my niece, I came across her hand written recipe book. It was buried in an old suitcase which we thankfully retrieved while searching something else in there. Just going through her recipe book got tears in my eyes. I do not remember seeing her maintain this book ever, while growing up. But I am so glad she did as I have something of hers now with me. In that recipe book I came across a simple vanilla flavored ice cream recipe. I decided to give it a try with my own twist.
I unfortunately lost the pictures which showed the recipe in steps. Thankfully this is a simple recipe to follow and maybe you will not miss those pictures at all. In a bowl add sweetened condensed milk, heavy cream and vanilla extract. Beat it using an electric mixer until thick and stiff. I had some leftover ferraro rocher chocolates from the Christmas party which I thought would be a good fit in this recipe. Crush them and add them to the bowl along with frozen raspberries to give this ice cream a pop of color. Gently fold it in the mixture. Pour this in a loaf tin/ice cream container, cover with cling wrap and freeze until it sets. Soften it slightly before serving. You can pour some chocolate syrup on top as well.

- 600 ml heavy cream
- 1 tsp vanilla extract
- 1 cup frozen raspberries
- 10-12 nos ferraro rocher chocolates
- chocolate syrup - optional
