I enjoy entertaining friends at home, be it board game night or a movie night with my girl friends. One thing that connects all of us is good food and some fine wine. Since it’s hot outside, everyone looks forward to something that will help them beat the heat. This ice-cream is an instant hit on such occasions, perfect for entertaining large groups. After all, it combines two American favorites, ice-cream and Peanut Butter!

While most of us have grown up eating PB sandwiches, I just felt that it would be interesting to give this classic meal a new dimension and serve it as a dessert instead. This no-churn vegan ice cream is super-delicious! You need to try it to believe it. In a blender, add almond milk, pitted dates, peanut butter, vanilla extract and almond butter.
Blend until super smooth and creamy. Line a loaf pan with parchment paper and pour this mixture in it. In a separate bowl add lightly toasted cereal (your choice). Add honey and mix it together. Add this to the peanut butter mix and mix lightly. Loosely cover the pan with a cling wrap and freeze it for 6-8 hours.
If you are as impatient as me, you will keep peeking to check on your ice cream. Well, its okay to be impatient on this one. It is that irresistible after all. Finally when its time, take the pan out and what you waiting for..dig in! Scoop a dollop – or two 🙂 onto your waffle cone or into an ice cream cup and serve chilled. You can get creative with the toppings and make it appealing for your guests.
I love the addition of cereal in this otherwise smooth and creamy ice cream because it gives it the required crunch and a certain flavor that kind of completes it.
