I think you all would know by now that we visited Salt Lake City last month for Everything Food Conference. It was all over my Instagram story. It was our first conference and we thoroughly enjoyed it. It was great to network with fellow food bloggers, get new insights on how to grow the food blog and we got a chance to interact with different brands which led to the beginning of a many new brand and influencer relationship. Overall it was a splendid experience for KR and me. Every Blog conference comes with its own set of goodies and not many admit to it openly, but we all come for that goody bag! It's like a surprise gift. You can't wait to get back to your room and quickly empty the bag to know what is inside. This is one of my favorite thing to do after such events apart from putting my feet up and unwinding as I process all the information. Who doesn't love some party favors here??
There were also some fresh herbs in that which we had to leave behind (sadly) as it would have gone bad by the time we reached Orlando. I gave it to the hotel staff who were more than happy to take it. Apart from some kitchen essentials, there were packets of food like Fruit Bliss Organic Turkish Mini Apricots and Blue Ribbon Orchard Choice California Organic Mission Figs. This was the first time I came across these products and I was looking forward to use it in some recipe. You all know how much we love having a smoothie for breakfast, so my first thought was to use these in some smoothie, however, I was waiting for the right fruit to pair it with. KR had picked up some fresh mangoes from Lucky's Market and he suggested that I make a mango smoothie for breakfast the next day.
I was in no mood to make a basic mango smoothie and decided to 'up' the flavor by adding in some apricots and figs to it. We normally prefer to have dairy free smoothies as we have noticed the change it brings to our body. There is no bloating and we feel more energized through the day compared to when we have a milk based smoothie. The recipe to prepare this Dairy Free Mango Figs & Apricot Power Smoothie is fairly easy. All you need is a Blender. Blitz to make a smoothie. The apricots and figs make this drink very smooth and creamy. Mangoes bring their natural sweetness to this thick drink making it an extremely filling drink. You can use regular figs and apricots of these not available. But I liked the taste of these products. Next time I am also planning to add some cocoa powder to the drink just to give it more chocolaty taste.
Dairy Free Mango Figs & Apricot Power Smoothie can be enjoyed not just as a breakfast smoothie but also like a dessert. In fact that is exactly what KR said after he had this mango smoothie. He insisted that this would make a great post dinner drink on a weekend and he now wants me to make this again for him this weekend. I can see all the seats getting filled up fast at my picnic table if I serve these as welcome drinks. Summer means mango for us and I am super pumped up with this recipe of mine which features mango as the hero ingredient. Its presented differently and pairs well with apricots and figs. I can see this becoming a regular in my kitchen especially during the summer season. This is one vegan non alcoholic drink that will be loved by all, kids and adults. Enjoy it for breakfast, as dessert or as a between-meal snack!
