Rambutan Rose Lassi is a cool & sweet Indian drink made with thick yogurt. Rambutan & rose syrup enhances the flavor & makes it lip-smacking & healthy too.
There are certain foods that are distinct to its location. Lassi is a popular Indian drink from north of India. Down south, we are buttermilk fans and up north it’s all about this thick and creamy lassi which can be sweet or salty. This famous summer drink is made with yogurt, water, spices and occasionally fruits. Lassis are enjoyed chilled as a hot-weather refreshment, mostly taken with lunch. While we all make it at home, it is also sold at most dairyRambutan Rose Lassi shops selling yogurt and milk apart from the Indian restaurants. Over time, there have been many variations to this simple drink. There was a dairy shop few miles away from our house. On days when we would be at our best behavior, my mom would treat us to Lassi by taking us to that shop. Seriously it is the best lassi I have every had. Sweet, thick, creamy and Smack!
Enjoying this lassi as a family is one of my favorite memory. If my dad was in a mood, he would let us even have two glasses each. My brother and I would love creating fake mustache with the froth and giggle looking at each other. After all these years, I was in mood to make this drink for myself. However, I had to give it my own twist of course. While doing my groceries, I stumbled upon Rambutan in the fruits section. It’s appearance intrigued me. Even KR didn’t know how this fruit tasted and before he could google it, I stopped him. “Why spoil the fun?, I told him. “Let me explore this fruit by myself. I love doing this. I always pick up an ingredient be it fruit/vegetable/spice/grain which I have never tried and then experiment with it. This gives me a high. Black Rice, Golden Beetroot, Edamame, Zucchini, Butternut Squash, Avocado, Sweet Potato are just some of the names which started off as being unheard to becoming regular items in my pantry!
Rambutan is native to Indonesia and Malaysia. Rambut is the Malay word for “hair”. The white flesh of this fruit looks exactly similar to Lychee and it is also very juicy. I loved the taste of it in my morning smoothie, so I decided to add it in the lassi as well to give it a new flavor and to spruce up the health quotient. Rambutan is rich in Vitamin C and minerals. The fruit is sweet, fleshy and juicy. Slit the fruit and peel off the hairy skin. It has a big seed inside which is toxic. So you need to carefully chop the white flesh You can either squeeze the juice out or chop around the seed. Whisk chilled yogurt and add it to a blender along with water. Add rose syrup and rose extract.
Then add the chopped rambutan and sugar. Blitz to make a smoothie consistency drink. Pour in serving glass and serve chilled.
I am in love with this lassi. It bought back so many wonderful memories of my childhood. It’s amazing how the simplest of food can bring out deep emotions from within. While no drink can bring me back those golden days, making this drink surely refreshed them. This rambutan flavored lassi drink is dreamy with just the right amount of sweetness and flavors. The rose syrup gives it this beautiful color and adds to the fragrance to the drink. This creamy drink is appetizing to the eyes and satisfying for the belly.
- 2 cups yogurt
- 8-9 rambutan
- 2 tbsp rose syrup
- 1/4 tsp rose extract
- 1/2 tbsp sugar (optional)
- 1 cup water
- Saffron, rose syrup and chopped pistachios for garnish

- You can add ice cubes to this drink as well. If doing so, reduce the water quantity. Rambutan Rose Lassi is ready. Garnish with chopped pistachios, rose syrup and saffron.
- You can add milk instead of water.
- You can make this lassi adding any other fruit.
