Preparing this Zaffrani Mewa Doodh after so many years bought back so many wonderful memories. For a brief period, we were living in a joint family setup. This means, there were 2 families living under one small roof, i.e my dad’s family and his brother’s family. Back in those days, we never demanded a separate room for ourselves and the concept of personal space was deemed a luxury. We all lived in one house together and were very much comfortable with this setup. My Chachi (aunt) was a Maharastrian and her style and personality would inspire me everyday. I still remember peeking into her dresser which was filled with an array of lipsticks neatly stacked in a row. It was a fascinating sight for a teenager like me. She would occasionally allow me to try one on and even dress me up. I would be the most excited while getting decked up. Her style of cooking too was very different to my mom’s which I began to like as well.
Zaffrani Mewa Doodh was one of her recipes. All of us at home instantly fell in love with this drink and she would prepare it for us whenever we kids were craving for it. She even taught my mom the recipe and over time, my mom too nailed this recipe and ever since then we have enjoyed this tasty drink on many occasions. I wanted to recreate this drink in my kitchen but with a vegan twist. Ever since we made a conscious shift to a “Less Dairy-More Plants” lifestyle, I have been experimenting in my own small ways to transition to plant-based food instead of dairy especially in drink recipes like smoothies and shakes. We made this shift recently to stay fit and healthy. I know it’s believed that its tough to stay healthy but it really shouldn’t be so hard! I want to tackle this point through easy to make recipes that help you achieve your fitness goals without compromising on the taste. Dairy-free drink recipes like this one can be served for breakfast or as a party drink/dessert.

We do use the online grocery store at Walmart frequently, especially on days when we are pressed for time. It’s totally the new way to do your groceries and I would highly recommend for you to try it.
Coming back to the recipe of the day, Vegan Zaffrani Mewa Doodh is my dairy free version for all you vegans out there! First, soak saffron in warm milk for 10 minutes. Meanwhile, coarsely grind the nuts like almonds, cashews, pecans and pistachios together. Pour Silk All Natural Vanilla Almondmilk into a thick bottomed pan and cook on a medium flame to bring it to a boil. Then add vegan cottage cheese, poppy seeds and chopped dates. Stir and lower the flame. Continue to cook the milk for 45-50 minutes. Keep stirring regularly. Eventually, the milk willreduce and thicken a bit. Then add the saffron and milk mixture to the pan. Stir and take it off the flame. You can serve this Vegan Zaffrani Mewa Doodh either hot or cold.

- 8 almonds
- 8 cashews
- 8 pecans
- 1/3 cup pistachios
- 1/4 cup vegan cottage cheese
- 2-3 tbsp chopped dates
