Cilantro, Spinach & Lentil Rice is a perfect side that is full of flavor & takes about 15 mins of your time. Loaded with greens, this lentil rice is yummy!
We would come home from school or college and always yell out to mom, “What’s there to eat?” She would see to it that there was always something exciting and different for us to eat. She had a knack of cooking up new recipes with whatever she had at hand. I don’t remember a single occasion when the food did not taste right. She somehow managed to always make a meal that would make us smile. I never realized the struggle she would have faced to do so every single day. It surely is not easy and now when I have to run a house, I can totally relate to her! Mom’s are truly the best and no one in the world can replace her. It’s a universal truth!
I learnt this trick of combining rice and lentils to make a Pulav type dish from her. Normally its made only with rice but sometimes mom would mix up some lentils like we do for Khichdi but make it like fried rice. I think the idea is pure genius. Lentils give a good break in texture and flavor to a rice dish. Plus it also notches up the nutrient value of the dish. Try it sometime and you will understand what I am talking about. Dishes like these can be served at family brunches, parties, get-togethers, weeknights, packed in lunchboxes, etc. Basically, this dish has the power to satisfy your hunger pangs and has a lingering aftertaste.
I make this dish very frequently at home. The rice is perfectly cooked and fluffy, the flavors are simple and wonderful. This is the kind of side that tastes amazing but really lets the main dish shine if serving with something. This is also a great way to use leftover rice. I prepare something with rice every weekend because both of us love rice. Sometimes we just need a quick no fuss dinner fast. That is when I prefer to make something with rice. Because its quick, easy, simple and delicious! You can play around with its flavors by combining different ingredients together. There is no right or wrong recipe, its totally what you feel like adding and what ingredients you have handy.
My recipe to make Cilantro, Spinach & Lentil Rice is very easy. Here is how I make it. I prefer to soak the rice and lentils together for 30 minutes first and then cook it in a rice cooker. This will ensure that the rice is long and grainy. Once they are cooked begin the process to make the fried rice. Heat oil in a pan, temper mustard seeds and cumin seeds. Once they begin to crackle, add chopped green chillies and minced garlic. Saute for a minute. Then add onions and continue to saute till they turn translucent. Next add the chopped spinach and cilantro. You can add any greens at this point. Cook for 2 minutes. Next add the cooked rice and lentils along with salt. Give it all a good mix. Cilantro, Spinach & Lentil Rice is ready. Serve with some papad, pickle or raita.

- 1 cup rice
- 1/2 cup lentils
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2 green chillies
- 12-15 cloves garlic
- 1 onion
- 1 cup spinach
- 1 cup cilantro
- salt as required
- Soak the rice and lentils together for 30 minutes first.
- Then cook it in a rice cooker. Once they are cooked begin the process to make the fried rice.

- Next add the cooked rice and lentils along with salt. Give it all a good mix.
- Cilantro, Spinach & Lentil Rice is ready. Serve with some papad, pickle or raita.
