I love one-pot recipes. They are hassle free, you just put in all the ingredients and its ready! I never knew Zucchini and Black Beans would go so well with each other until I used them today to make this rice. They along with the cheese blend in so well to give this dish its real flavor. It’s a perfect meal to come home to after a long tiring day at work!
The Indian in me just cannot avoid using certain spices unless they definitely should not be used in a particular recipe. Yes, guilty as charged. So when I decided to make this rice dish with zucchini and black beans, I exactly knew what spices I would use in this dish to give it an extra zing.
It is a colorful dish and surely does look appetizing. I love it when the dish turns out like this. It brightens up the day. All the veggies and beans bring in a variety of flavors in this dish. It is super easy to make it and healthy too. I have made this in just 1 tbsp of cooking oil!
1 zucchini, finely chopped
1 red bell pepper/capsicum
1 tomato, finely chopped
1 cup boiled black beans
1/4 cup chopped cilantro
1 tsp ginger paste
2-3 garlic cloves, minced
2-3 green chillies
1 tsp chilly powder/paprika
1 tbsp roasted cumin powder
2 tbsp fat-free cream
1 1/2 cup cooked brown basmati rice
1 tbsp cooking oil
1/4 cup fat-free shredded cheese
Ready all the ingredients.
In a large pan, heat the oil. Fry the garlic and green chillies till they turn golden.
Add the onions and fry till they become translucent.
Now add the tomato along with little salt. Cook till they turn pulpy.
Add the zucchini and bell pepper. Saute for 2 minutes.
Now sprinkle the chilly powder and cumin powder.
Its time to add the black beans. Mix it well and cook for a minute.
Add in the fat-free cream and mix.
The brown rice goes in next. Mix it and check salt. Add if necessary.
Spread it evenly across the pan, sprinkle cheese and cilantro. Switch off the gas, cover the pan with a lid and let it rest a 2 minutes.
Serve immediately. If you plan to serve this later, then do not add the cheese now. Add it just before serving. You need to heat it again and then add the cheese. Serve this rice as is or with some wholesome soup.
Zucchini is surely gaining popularity in my house. Just last weekend my husband enjoyed eating Zucchini Nuggets that I had made. And today its Zucchini & Black Bean Rice! 🙂
