    Delicious and easy to make, this savory oats and veggie mini pancake makes a great, healthy breakfast that both kids and adults can enjoy. You can have this vegan pancake even for dinner! With just a few ingredients you could be on your way to making this your favorite breakfast ever!

    Want some? Why eat the same old pancakes when you can try something new? In fact, I love them so much now that I wouldn't mind serving these at a pool party! All I need is some spicy green chutney to go with it. Yum. It would be unfair to limit these pancakes to only breakfast. A nutritious meal like this can be and should be enjoyed at any time of the day. In fact, we are a family that enjoys having pancakes for dinner as well. It's zero effort right. Make the batter ahead of time and refrigerate it until you need it. At dinner time, take the batter out and make fresh pancakes and serve them hot. If this is not quick and easy then what is? I have always been someone who prefers to work smartly than slog all day. Be it studying or cooking, I apply the same logic and that is what gets me through. Therefore even the recipes that you find here at Cookilicious are stress and hassle-free to make and most of them are instant using minimal ingredients. That surely is my USP.

    Healthy pancakes are here to stay. Just the simplicity of making them is what attracts me to it. The possibilities of new and different varieties to make vegetarian and vegan pancakes are infinite. Having been a vegetarian all my life, creating new recipes using wonder-foods like oats, quinoa, bajra/pearl millets, etc gives me a different high. But yes, I always try to incorporate veggies in it to make the dish more balanced and to promote good health. This recipe idea to make oats and veggie pancake have been in the family for some time now. My in-laws love OATS and look at including it in their daily diet in one way or the other. My FIL loves to try something new with oats and will often share his recipes with me. My MIL who is an awesome food preparer makes these Instant Oats dosa for a snack and it's yum.

    I thought of using her recipe as a reference to make these healthy pancakes. We all know how good oats are for our body. They are among the healthiest grains on earth. They're a gluten-free whole grain and a great source of important vitamins, minerals, fiber, and antioxidants. Studies show that oats and oatmeal have many health benefits. These include weight loss, lower blood sugar levels, and a reduced risk of heart disease. Including them in your diet is a smart choice to make. I use old-fashioned oats at home and always roast them first before grinding them to a fine powder. I stock oats powder in my pantry and add them to recipes as and when I need. The recipe to prepare Healthy Oats & Veggie Mini Pancakes is pretty straightforward.

    In a mixing bowl, add oats powder, semolina flour, rice flour, salt, and veggies like shredded cabbage, onions, bell peppers, green chilies, and curry leaves. Then add chopped cilantro and my favorite - buttermilk. You can add water as well instead of buttermilk. But adding this buttermilk will just give it more flavor and a better taste. Mix it all together to form a batter. It should be of pancake/dosa batter consistency. You need a mini pancake pan like this one here. Smear oil and fill each mold with batter. Cook both sides on medium flame. Take them off the pan and serve them warm with some coconut chutney or any other green chutney.

    Healthy Oats & Veggie Mini Pancakes are very filling which makes it a complete meal. The veggies make it more nutritious and when combined with oats, these pancakes become irresistible. It is also a great way to serve this healthy grain - oats. People like me cannot consume oats as cereal. I need to hide it in something and only then eat it. While KR even loves his overnight oats, I prefer to stick to smoothies or something savory. We had this for dinner and then for breakfast the next day. It tasted great. Loaded with fiber and protein, these toothsome pancakes will help start your day on an energetic and exciting note. It has the potential to become a favorite on the breakfast or breakfast for dinner menu at your house!

    Note - To make it gluten-free, substitute semolina with chickpea flour.

    Ingredients 

    • 2 cups oats powder
    • 1 cup semolina/rawa
    • 5 tbsp rice flour
    • 1 cup shredded cabbage
    • 1 onion
    • 1 bell pepper
    • 2 green chillies
    • 5 curry leaves
    • 1/2 cup cilantro
    • salt as required
    • Buttermilk as required
    • cooking oil as required

    Instructions
