Stuffed paratha are a savior in any Indian kitchen. You can be as creative as possible and cook up some healthy and tasty paratha using various combinations. This time I have made Beetroot Paneer Paratha which is a stuffed paratha made with beetroot, its leaves and paneer. It makes a hearty meal by itself. Very tasty and nutritious paratha.
Beetroot leaves are very healthy if consumed. So its good to include them in the recipe when possible. I have made Beets Bahaar in the past where I incorporated the beetroot leaves in the recipe. In this particular recipe, I have mixed beetroot with paneer and green peas to give it more flavor. This is one of my creations and I am very happy about it. Beet tops/leaves carry more minerals, vitamins and health benefiting pigment antioxidants than its tap-root, and yet they come as one of the very low calories leafy-greens. So yes it does make lot of sense to include them in your diet.
2 cups chopped beet tops/leaves
3 small beetroot, boiled
1 cup crumbled paneer
1 boiled potato
1/2 cup green peas
4-5 green chillies, minced
1 tbsp ginger paste
3-4 garlic cloves
2 cups wheat flour
2 tbsp flax-seed powder (optional)
In a mixing bowl add beetleaves, salt, garlic and ginger.
Now add the paneer and green peas.
Add beetroot and green chillies.
Now add the potato.
Mix it all well. Check salt and add if necessary.The stuffing will have a nice pink color to it. Divide the stuffing into small size balls. If the stuffing is not shape-able, add some chickpea flour to it.
Now its time to make the dough, using a Cuisinart Food Processor. Add the flour, salt, little oil and water to knead into a soft dough.
Keep the dough aside. Heat a flat skillet. Shape the dough into medium size balls. Using a rolling-pin, flatten the ball and place the stuffing in the center.
Seal the paratha and roll it again sprinkling some dry flour.
Put this on the warm skillet and cook it evenly on both sides. Spread some oil on each side.
Beetroot Paneer Paratha are now ready. Serve them hot with any chutney, curd or pickle.
