Lettuce wraps filled with golden beetroot tater tots & yogurt salsa is delicious, filled with new flavors & great for entertaining or a family style meal.
Lettuce wraps or lettuce sandwich is a wrap with lettuce substituted for bread. This totally eradicates the calories that come from bread while still enjoying the goodness of the filling. We are a regular at P.F.Chang restaurant and the lettuce wrap that they serve is one of our favorite. Every time we are there relishing this yummy appetizer, KR tells me that I need to recreate this dish back home. I just never got a chance to make it until now. Although, the restaurant serves seasoned tofu on a bed of lettuce leaf, I wanted to try something else.
Last week, we visited a newly opened grocery store in our neighborhood. The best part about this store is that they sell organic and fresh produce directly from the farmers. This supermarket has become my new favorite place to hangout. You can sip on wine as you shop and they also have a live salad bar to munch something whilst shopping. Ain’t that cool! I love the variety they offer in terms of fresh produce, herbs, multi cuisine products, grains and even candies. Both KR and I loved exploring the store and literally spent a couple of hours there with no regret. In fact that is the longest I have spent in a store that is not selling clothes for a change!
That day we did pick up some veggies which I had never cooked with, like sweet potatoes, Brussels sprouts and this thing called Golden Beetroot. Until then I had not even heard of this variety of beetroot. I always thought that it came in only one color. Since it intrigued me so much, I had to add it to my cart. Coming home, I checked with my in-laws on whether they had heard of this vegetable. My father in law told me that these yellow ocher colored beets are also available in India and are sweeter than red beets. Also that it’s a beautiful beet that won’t bleed like red beetroot. The greens are also very tasty and go well in salads, stir fries and can even be cooked like spinach sabzi.
I have cooked with the red beetroot many times and I actually love this deep red vegetable. It adds so much color and texture to a dish making it appetizing to the eye and tongue. Just recently I had made Beets & Peanuts Raita and it was delicious. A perfect cooling dish fir this summer. Another interesting recipe is Beetroot & Edamame Fried Rice which satisfies my craving for rice in a healthy way. This protein rich rice can be served as main course or in lunch boxes. Another popular recipe on my blog with beets is called Beets Bahaar. The best part of this recipe is that it uses the leaves as well. However this was the first time I was cooking with golden beetroot.
Tater Tots is an American dish. It’s mainly made using potatoes. One can make a variety of dishes using tater tots. You can make it in bulk, freeze it and use as required. Most kitchens have a bag of tater tots handy as its loved by all specially children. They are lip smacking. While I was trying to figure out what to make using this beetroot all these things came rushing to my mind. So I decided to use all these elements, lettuce wraps, tater tots and beets in my recipe! I just needed to make something substantial to go with it. So I zeroed upon yogurt salsa. This is something similar to the vegetable raita we make, however this is not too fluid.
First I decided to make the yogurt salsa. In a mixing bowl, add chopped onions, tomatoes and beetroot leaves. Add yogurt and whisk it all together. Season it with green chillies, coriander cumin powder and salt. Give it a good mix and let it in the fridge to cool.
Now to make the beetroot tater tots. Boil the beetroot with some salt and turmeric powder. Peel and grate it. Squeeze out all the excess water and add it to a mixing bowl. Now add all purpose flour, garlic powder, herbs like dried parsley, oregano, rosemary, thyme, basil and salt. Mix and shape them like tater tots and deep fry them till they are brown and crispy.
Now for the assembly part, add a dollop of yogurt salsa over the lettuce, place the tater tots over it and sprinkle dried cilantro for garnish and serve.
I couldn’t resist and had a couple of them before I could take pictures. As a result, I had to make them again. However I did not mind that. These Lettuce wraps with golden beetroot tater tots & yogurt salsa are to die for! It’s so light, has a slight crunch, the yogurt salsa blend well with the beetroot tater tots making it absolutely delicious. I would love to snack on these at a party or at a family meal.
- 1 onion chopped
- 1 to mato chopped
- 1 cup beetroot leaves
- 1 cup yogurt
- 2-3 green chillies
- 1 tbsp coriander cumin powder
- 2 golden beets
- 1 tsp turmeric powder
- 2 tbsp all purpose flour
- 1 tsp each - garlic powder herbs like dried parsley, oregano, rosemary, thyme & basil
- Salt as required
- Oil for frying
- 5-6 lettuce
- 1 tsp dried cilantro

You can use red beets in place of golden beets.
I had lots of fun creating this recipe and even more fun eating it. This makes a great substitute to a regular sandwich . We had this for dinner and relished it. In fact KR did not believe me when I told him that these tater tots were made of beetroot. They had a sweet and spicy taste to it. The yogurt salsa was just a perfect accompaniment for this dish. Beets and yogurt is always a good combo. You can have this for a snack or for a main course. To make it healthier, you can try baking the tater tots instead of frying. But, truly this is one dish that can easily be a crowd pleaser and also a lifesaver when you have some surprised guests over.
