Hummus & Sweet potato sauce is a great way to still get the creaminess of the classic Alfredo sauce but with a lighter & more flavorful & nourishing sauce!
Aren’t we all on the look out for such pasta sauces that are way lighter than the regular ones so we can enjoy it guilt-free??? Hell Ya! We are! Do you know what I do when I am craving for some pasta? I make my own sauce from scratch using different veggies to keep it nutritious and give it more flavor. Sometimes I wish that the restaurants would even serve these kind of sauces for vegetarians like me!
Pasta being a regular feature in my home, I need to keep reinventing and coming up with new and interesting sauces to go along with it. This pasta is extra special as it has the goodness of two things – hummus and sweet potato! I have used a spicy hummus here to go along with sweet potato. This high carb dish is flavorful, simple and delicious. A smooth and creamy pasta sauce that will surely satisfy your cravings.
The recipe is super easy. I had picked up this Linguine Pasta last week from Trader Joes which was garlic and basil flavored. I decided to use it in this recipe. Here is what you need to do. Cook the pasta as per the instructions on the packet. In a food processor, add hummus, boiled sweet potato, sun-dried tomatoes, garlic, almonds and salt. Blitz to make a smooth and creamy sauce.
Melt butter in a pan, add minced broccoli and chopped bell peppers. Saute for 7-8 minutes. Then add the hummus sauce and mix it all together. If you feel the sauce is too thick, add some milk to dilute it. Cook for 4-5 minutes. Then add the grated cheese, Italian seasonings, red pepper flakes and salt.
Once the sauce is done, add the cooked pasta and serve. I like the sauce to be a little thick than runny, but you can make the sauce consistency to be the way you like it. This pasta is very flavorful, spicy, tangy with a hint of sweetness. All the ingredients blend and come together beautifully. This Hummus and Sweet Potato Alfredo Pasta unites comfort, ease, and feel-good nourishment all in one bowl.

- 1 packet pasta
- 1/2 cup hummus
- 1 sweet potato
- 1/3 cup sun-dried tomatoes
- 3-4 cloves of garlic
- 6-7 almonds
- Salt as required
- 1 tbsp butter
