One pot taco mac & cheese is a fusion recipe in which the Mexican Taco meets American Mac & Cheese! A delicious vegetarian combination in time for the holidays.
What does one do when they love Mac & Cheese and Tacos equally?? Simple, make Taco Mac & Cheese Pasta instead! Now don’t blame yourself for not thinking of this idea yourself. I have done that for you. This ingenious idea is my current favorite meal. Mac & cheese has a universal appeal to not just children, but adults as well. The same goes for Tacos as well. Just the idea of mixing the two great yet simple-to-make dishes together made my mouth water. This dish is purely a result of my marriage. KR loves tacos and I love Mac & cheese. In fact, many times I end up ordering it from the kids menu when the vegetarian options don’t excite me.
The reason I thought of this innovative recipe was purely because I got to use this delicious Fresh Cravings Restaurant Style Salsa in it. There are really many ways one can incorporate Fresh Cravings salsas into spreads and recipes. I prefer this salsa over the others available in the market because it truly is a game changer. The fact that Fresh Cravings salsas are never cooked or pasteurized makes me want to grab it every time I visit the grocery store. Fresh Cravings has two salsa varieties—Restaurant Style and Chunky (16 ounce)—and they both deliver an authentic, fresh flavor for a comparable price to the leading jarred varieties. There are times when I add this salsa to my Indian gravies while cooking and they turn out great. It has all the ingredients needed to satisfy my palate.

This recipe is fit for both entertaining a large group and for serving on a romantic date night. You can use and serve Fresh Cravings salsa in your own creative way when entertaining on the weekend, hosting a Super Bowl party, or simply celebrating the New Year with your loved ones. The recipe is so ridiculously easy that you will love it. Heat olive oil in a pan, then add and fry chopped onions and minced garlic for a minute. The onions will turn translucent and garlic will turn golden. Then add the taco seasoning and continue to saute for another minute.
Next add Fresh Cravings Restaurant Style Salsa to the pan (Always stir the salsa before adding it to the pan). Saute for another minute or two and then add white sauce. Once the sauce begins to boil, add the cooked kidney beans to the pan along with grated cheese. Mix it all well together and once the cheese begins to melt add the cooked elbow macaroni. Lightly mix it together and garnish with cilantro. Check and add salt and pepper as required.
