    I was missing holiday baking so much that I was itching to bake another cake. Finally, I got a valid reason to do so! 

    Breakfast cakes are always welcome especially in a house with kids. 

    They're quick to make, light yet filling and a cake on the breakfast table makes everyone happy! It sets the mood for the day!

    Yogurt in a cake!

    Have you added yogurt to the cake batter? If no, then let me tell you, yogurt is an excellent dairy to use in baking!

    I have used plain Stonyfield Organic yogurt in this recipe. Here are some more reasons to use yogurt in baking. 

    • Its creamy texture helps keep the cake moist
    • The tangy flavor imparts a crave-worthy, old-fashioned flavor
    • The acidity in yogurt reacts with baking soda and helps in leavening
    • It also makes the cake light and fluffy
    • Improves the texture, and density of the cake without adding butter or eggs
    • It works as an excellent substitute for butter making it a low-fat option

    Why Stonyfield Organic yogurt?

    We always have yogurt in our fridge because we LOVE yogurt. Being a South Indian, we consume curd/yogurt a lot!

    We recently came across Stonyfield Organic yogurt and have really taken a liking to it. 

    It's organic which means it's made from the highest quality ingredients and contains no harmful persistent pesticides.  

    When I began working with this brand, I got to know something that really made me love them even more: as a company, they take care of their organic farmers and their cows by sourcing the milk from small farmers in the Northeast.

    Since we are always stocked up on this yogurt, I can put together any recipe using it within minutes.

    Going into the new year, I'm aspiring to a healthier lifestyle by not using products like butter. Instead, I'm using protein-rich products like yogurt.

    Why make this

    This Citrusy Olive Oil Yogurt Cake is a classic and scrumptious breakfast or snack cake that all will love. It's a moist, spongy, and flavorful cake.

    Ingredients needed

    Needs basic pantry staples!

    I love that this loaf cake can be made with basic pantry ingredients.

    Flour - Use whole wheat flour in this recipe

    Milk - Use any fat milk

    Oil - Olive oil works in this recipe

    Yogurt - Use Stonyfield Organic plain yogurt. This works as a great alternative to butter

    Organic Oranges - Orange zest and can also add orange juice 

    Sugar - Fine granulated sugar or caster sugar works for baking recipes

    Chia seeds make this loaf cake healthier

    Baking soda and baking powder helps in the baking process

    Vanilla extract for added flavor

    Here's how to make it

    So easy to make and bake!

    Since we will need orange zest (it's the colorful outer peel of this citrus fruit) for this recipe, we will first work on that. 

    How to zest an orange?

    Wash an orange under running water. Using a grater or Microplane zester, grate the orange layer of the peel. 

    Do not grate the inner white portion as that will be bitter to taste.

    Workaround the entire fruit. One orange will yield around 4 tablespoons of zest. Keep this zest aside. 

    1. In one large bowl, sieve and stir together whole wheat flour, baking soda, and baking powder.
    2. Add chia seeds and mix. Keep it aside for now.
    3. In another bowl, add oil, and milk.
    4. Add powdered sugar and whisk it together till it's well combined.
    5. Then add the Stonyfield Organic yogurt to the bowl. 
    6. Next, add the orange zest, and vanilla extract. Mix it all together. 
    7. Make a well in the center of the dry ingredients and pour the wet ingredients into the well.
    8. Gently fold the mixture using a rubber spatula only until the ingredients are combined.
      • Pour into the loaf pan and sprinkle the top with chia seeds.
    9. Preheat the oven to 350°F. Add a cup of water to a wide baking pan and place it at the bottom of the oven while it's getting pre-heated. 
      • Grease and line a loaf pan with parchment. Bake for 40-45 minutes until a toothpick stuck into the center comes out clean.

    Serving Suggestions

    Slice and serve the cake warm or cold along with tea or coffee. This Orange Cake with Yogurt is perfect for any occasion.

    You can serve it for breakfast, at parties, for date nights, brunches, or even distribute them as food gifts. 

    Some topping ideas

    While I prefer my cake without any toppings, you can drizzle some chocolate sauce/Nutella, or sprinkle some icing sugar or shredded coconut on top. 

    If you want, you can also add some citrusy cream cheese frosting on top and make it fancier. 

    You can also prepare a tangerine glaze by mixing sugar and orange juice and drizzle it over the cake. 

    Even a layer of some fruits, fruit jam, or preserve on top would taste so good. BTW, it also makes a great base for any fondant-covered cake. 

    We enjoyed it with some vanilla ice cream and it was so good! 

    Top tips, recommendations, and suggestions

    I have used whole wheat flour but you can also use all-purpose flour or self-rising flour. 

    Feel free to use corn oil, canola oil, or any other vegetable oil instead of olive oil. 

    You can add 1/4 cup of orange juice to the bread batter to give it a more citrus flavor. 

    Add more milk if the batter is too thick.

    You can even bake them in bundt pans, muffin trays, or cake tins. Just be vary of the bake times.

    Instead of orange, use lemon zest and juice to make Lemon Yogurt Cake or maybe even tangerines.

    Whatever citrus fruits you use, ensure they are organic.

    Since we are using the zest from the peels, make sure they are pesticide-free.

    To make it vegan

    Substitute yogurt and milk with dairy-free yogurt and milk. 

    How to store leftovers?

    Got leftovers? put it in the fridge and it stays well for 4-5 days. 

    You can also freeze them. Slice them and store them in freezer-safe containers.

      Hello,
      The picture of the ingredients says “powdered sugar” but the ingredient list just says sugar. Can you use either, or do you recommend one over the other?

        yes, you can use it. If using Greek yogurt, you will have to beat it first to give it a loose consistency.
