I had never heard of Black Rice until now. While doing my grocery shopping this week, I came across this rice at the organic section. I was intrigued. I added it to my cart, nevertheless. I had no idea what to do with it nor how does it taste. So I took it up as a challenge to see if I could create some dish with this. I love experimenting with new ingredients.
Coming home, I began my research on Black Rice. It was impressive to know that its very ancient, used as food for Chinese royalty, in India it was used for medicinal purpose as well. Internet also told me that Black rice is high in nutritional value and is a source of iron, vitamin E, and antioxidants (more than in blueberries). The bran hull (outermost layer) of black rice contains one of the highest levels of anthocyanin antioxidants found in food. I was sold.
I read that it has a slightly sweet yet nutty taste to it. So I had to bear that in mind while creating my recipe. I had some leftover Cauliflower in my fridge. I was thinking of various recipes where I can use rice. My mom used to make rice balls as appetizers. So I decided to combine these 2 ingredients and create my recipe calling it – Cauliflower and Black Rice Fritters. These can be enjoyed over breakfast, as an appetizer or as your main dish. I had it for lunch. It was pretty filling.
1 cup black rice
2 cups cauliflower florets
1 tsp Homemade Turmeric Powder
1/2 cup chopped cilantro
4-5 garlic cloves, minced
1 tbsp ginger paste
5-6 green chillies, chopped
1 tsp baking powder
1 tsp pepper powder
3/4 cup grated Parmesan
Juice of half a lemon
1 large onion, finely chopped
5-6 tbsp of cooking oil
Wash the rice well, then cook as per instructions on the pack. I used 2 cups of water for 1 cup of rice. Add bay leaf and cinnamon along with some salt and cook it in a rice cooker.
Once done, take it out in a bowl. Add handful of cilantro and lime juice. Mix it well.
Keep it aside for now. In another bowl, add the flour, parmesan, baking powder and salt. Mix it up.
Keep that aside as well. Boil the cauliflower florets along with turmeric powder and salt. Boil them till they are soft.
Using a masher, breakdown the cauliflower into fine pieces.
Add onion, green chillies, garlic, ginger paste and eggs to it.
Mix them well. Now add the flour mixture.
Fold it in. Now add the black rice.
I prefer using clean hands to mix it all up. You can use a spatula. The mixture is now ready.
To make the fritters, heat a pan. Drizzle in some oil. Scoop in a spoon full of this mixture and put in over the pan. Press it lightly to flatten it.
Cook on medium-high flame for 2-3 minutes. Carefully flip it over to cook the other side. Cook it again for 2-3 minutes. Drizzle oil on all sides.
Cauliflower and Black Rice Fritters are ready. Serve them hot with tomato ketchup/green chutney. They are cheesy, spicy, crunchy and tasty! You can make the batter and refrigerate it for a day or two.
You can make this without adding eggs as well. But you would need to add a boiled potato for binding instead.
You can substitute any other white/brown rice for black.
