Chocolate Coconut Raspberry Overnight Oats might just save your mornings. Here is a healthy no-cook oatmeal recipe that can make your breakfast scrumptious!
I have been an overnight oats virgin until now. I love Pinterest and I have seen innumerable overnight oats recipe there but never dared to attempt it. I was not convinced about how it would taste although I knew that it would be super healthy. I was in India last month and that is when I saw my in-laws have overnight oats for breakfast nearly every other day. While they would insist that I give it a try, I could never make myself up to it.
Since it was Summer in Bombay while I was there, there was an abundance of mangoes in the market. My FIL who is also a great cook himself and likes to develop his own recipes, decided to add mango pulp to his overnight oats and made me try it. Now, I cannot resist mangoes so I obliged little skeptically. And I am so glad I did! It tasted delicious and that got me thinking. I had to make this for KR and that is what I did after we got back home!
I wanted to use new flavors this time and therefore went ahead with coconut, raspberries and oats. Luckily I found these chocolate coated coconut flakes at a grocery store which worked so well for this recipe. In a bowl add oats, cocoa powder, unsweetened desiccated coconut, raspberries, chia seeds, Greek yogurt, vanilla extract, honey and rock salt. Add almond milk and mix it all together.
Cover it with cling wrap and refrigerate it overnight. This gives it enough time to soak in all the flavors. In the morning, take it out of the fridge, unwrap and garnish it with coconut chips, dried raspberries and desiccated coconut. Serve chilled. This bowl is hearty and filling besides it being nutritious and delicious. A breakfast you will not regret having!

- 1/3 cup plain Greek yogurt
- 1/2 cup rolled oats
- 2/3 cup almond milk
- 1 tablespoon chia seeds or ground flax meal
- 1/2 teaspoon vanilla extract
- Pinch of rock salt
- 2 tablespoons honey or maple syrup
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup unsweetened desiccated coconut
- For garnish - as required
- Dried raspberry
- Chocolate Coconut Chips
- Desiccated coconut
- In a bowl add oats, cocoa powder, unsweetened desiccated coconut, raspberries, chia seeds, Greek yogurt, vanilla extract, honey and rock salt. Add almond milk and mix it all together.
