I still cannot believe that 2015 went by so quickly! Well this happens to me every year. I feel the days are just racing against each other to get over with. December is all about getting your perspective right, set new goals, retrospect on the year that went and look forward to the coming new year. Cookilicious was launched in 2015, it was known as Confessions of a Foodie before that. It has been an exciting journey so far. I have learnt a lot about food, photography, styling and nutrition. My passion for food has increased multi-folds. There were some recipes that I tried this year which I never thought I would/could like Almond Milk or Jalebi to name a few.
I even created my own recipes which gave me a huge high. I made Zucchini & Black Bean Rice, Dill ke Pakode, Butternut Squash Crepes/Uttapam to name a few. This was also the year that I got my new DSLR (a Christmas gift from KR), so all the latest recipes have been captured by my Nikon. Still learning the tricks of the trade. Mid year I started venturing out across all social media platforms and by the end of this year have managed to gather a decent number of followers on my blog. Cookilicious Recipes – Best of 2015 – This is my #2015best9 recipes from the blog. There are some more as well, but I chose to keep these as they have been the most searched recipes this year. Plus I like these pictures.
Black Eyed Peas & Dill Curry is a vegetarian dry curry. The unique flavor of Dill brings in a new taste to this sabzi. This protein rich curry is surely worth a try.
Blueberry Frozen Treats is my version of Blueberry ice-cream. You do not need an ice cream maker for this recipe and it is totally healthy. Yes, this is a healthy ice cream!
Rawa Paniyaram is an Appe pan recipe. This was the most popular recipe this year on my blog. A quick fix breakfast option, kids are sure to love this and eat it with no fuss plus its healthy since it’s made in very less oil.
Pink Idlis are irresistible! I mean just look at them! That lovely pink color they have is because of beets. Hot steamed idli on a plate – best breakfast ever!
Edamame & Spinach Soup is one nutritious soup! Edamame is very rich in protein and is a good option for vegetarians. It’s suggested that we incorporate it in our daily diets in some way. This soup is creamy, tasteful and nutritious.
Carrots & Peanuts Chutney is one of my creations. This bright orange chutney has a hint of peanut flavor to it. It has a sweet and spicy taste to it.Can be used instead of the regular green chutney to wow your guests.
Butternut Squash Pasta is a vegan pasta made in butternut squash sauce and mushrooms. The squash brings in a sweet taste to the dish, is creamy and is totally healthy. Pastas need not always be made in white/red/pesto sauce.
Edamame & Carrot Burger is a great option for vegetarians. I have used homemade Almond butter for the spread. My recipe was also featured in 2 other food blogs as part of their Guest Post. Another proud creation from my kitchen.
