Egg Pepper Roast is one of the most easiest and simplest side dish ever! Boiled eggs roasted with freshly ground peppers and turmeric powder is super delicious.
Cookilicious is all about vegetarian and vegan recipes, however occasionally I love sharing recipes with egg in them since we are eggetarians. We eat egg and egg products once awhile and I love sharing with my readers the recipes that I enjoy making. My dad got us used to eggs actually. He would make French Toast for us. My mom being a hardcore vegetarian, was so paranoid that she would ensure that he uses a separate pan for eggs which was not mixed with her regular utensils. She would not be in the kitchen while he prepared it and would expect him to clean us as well. My dad very sweetly obliged to all her whims. She allowed us to eat eggs because my dad had convinced her that eggs are good for health. We would enjoy his French toasts and omelet every other Sunday morning. It surely was a fun way to start the week!
Egg Pepper Roast is a South Indian recipe which I recently discovered. I have never eaten this curry before but recently while talking to a South Indian friend, she mentioned that she had prepared Egg Pepper Roast for dinner. Ok, before we move on, let me share with you my one quirky habit. I love to know what people are having for a meal whenever I am talking to them. You never know where you may find your inspiration. Some of my meal ideas have come from hearing my friends share their dinner plans with me. Either I recreate that dish or give it my own twist. The last time I spoke to a friend, I went and made Leftover Chapati Poha/Puffed Rice. Today it was the turn of making this super easy and delicious side dish.
The recipe to make Egg Pepper Roast is very simple and needs very few ingredients. Boil eggs, peel and make a small slit on both side of the egg. Heat oil in a pan, Temper mustard seeds and then add pepper powder. Fry for 30 seconds and then add salt, turmeric powder and curry leaves. Saute for another 30 seconds. Then add the boiled eggs and give it a good mix.
Take it off the flame after a minute and the eggs are coated well with the masala. Egg Pepper Roast is ready!
This dish can be served as a side along with any main course or a rice dish. It can also be enjoyed for breakfast or as an evening snack. You can even have them as a light pre/post workout snack. A versatile dish which is extremely appetizing. Such a simple egg recipe which even kids will enjoy. Of course, reduce the pepper if making it for them. KR enjoyed this dish with some toasted bread and mayo. It’s spicy, healthy and a protein packed meal.
- 4-5 eggs
