So my breakfast options are always something that I can easily make in no time. Yes, I need to make something quickly, it should taste good and be healthy! These are the only three criteria when I plan my breakfast menu for the week!

Vegan Bagels are for real
My trips to Costco are incomplete without these yummy bagels in my cart. I have tried all the varieties they have and love each one of them. I enjoy making Guacamole Bagels for KR since he LOVES anything avocados. If you are vegan, you need to read the labels carefully because not all bagels maybe vegan in there. But you can now find vegan bagels at any grocery store or on Amazon.
What goes with bagels for breakfast? Avocados are my best bet! But instead of just adding slices of avocado, I like to notch it up a bit. My healthy homemade guacamole recipe works great as a topping for bagels!

Here's how to make it
The recipe to make these vegan bagels is pretty straightforward and can be easily made by anybody. To make this healthy guacamole recipe, you need ripe avocados. They should be soft when you press it and not hard.
1 - Chop onions and soak them in water for 10 minutes. This reduces the rawness of onions.
2 - Cut and de-seed the tomatoes from the center. Then finely chop them.
3 - Slice the avocados and scoop it out. Transfer it to a mixing bowl. Using a fork
, mash it well.
4 - Mince green chilies. Add the tomatoes and green chilies to the bowl of mashed avocado. You can also add minced garlic now.
5 - Strain the onions and transfer them to the bowl as well.
6 - Then add the roasted cumin powder, salt, and lime juice to the bowl. Add some paprika as well to make it spicier.
7 - Lastly, add chopped cilantro. Give it a good mix and Guacamole is ready!
8 - Now to prepare the vegan breakfast sandwich, cut a bagel in half and warmly toast it. I just love my 4-1 toaster
as it saves me so much time especially in the mornings when I am pressed for time. Spread vegan butter over every cut half.
9 - Then spread guacamole generously over as bagel toppings, sprinkle dried herbs, and then close the sandwich with the other half.

You can even smear some chutney over the bagel slices and then add the toppings like guacamole, seeds, and herbs. The guacamole can be refrigerated for a day or two for a quick grab and go breakfast. It also freezes well for up to 3 months.

Choose the perfect avocado, to begin with. It should not be hard but have a little give when you gently squeeze it. Always make guacamole using fresh ingredients. It's alright to make it a bit spicy because it tastes better that way! Mashed guacamole using a fork or a potato masher tastes better than the pureed ones. It's got more texture when its little chunky. Taste it, and if it's too tart, add a pinch of sugar.
Although you can refrigerate it, it is always best to make it fresh. But if you do need to make it in advance, you’ll want to keep it from turning brown. Seal it tightly with plastic wrap, pressing the plastic down so it actually touches the guacamole.
