These mini butternut squash fritters are flavorful and a great way to sneak veggies onto the plates of your picky eaters! It's the ultimate fall side dish.
I have noticed that breakfast recipes do the best on my blog. There have been many breakfast recipes that have gone viral but it doesn't surprise me. We all love to have a good meal to kickstart our long day. If it's not elaborate and quick to make, that makes the recipe more appealing to majority of us. Like you, I too am always on the lookout for recipes that make life worthwhile and have realized that one can do wonders with the basic dish - Crepes! You can get as creative as possible, the possibilities are endless. Personally, I have tried so many crepe recipes that I have lost count. I take them from various sources. Sometimes its my creative mind that is churning up a new recipe or its my MIL or aunt who suggest me an age-old recipe or it is Pinterest which gives me that missing inspiration. Whatever rocks my boat, I grab it!
I had my childhood friend and her daughter visiting me from New Jersey. Since we were seeing each other after 4 long years, there was lots of catching up to do. I wanted to limit my time cooking and spend more time with her and hence, planned my menu accordingly. Crepes for breakfast works like magic. Make the batter ahead of time, store it in the refrigerator and take it out as and when needed. Rule of thumb for me is that I NEVER repeat a recipe unless in dire need. This rule is mainly because of my blogging. There are so many recipes yet to be created or recycled that I cannot afford to repeat the same recipe. Well, that's just me! When I was planning on making some crepes for breakfast, I decided to use something I have never used before in this recipe - Butternut Squash. Plus I was excited to use my new mini pancake pan. You must get this one. It's so much easy, especially if you have many mouths to feed in one go. And of course, they look so cute!
I had a packet of frozen butternut squash cubes in my freezer. They were actually leftovers from our last week house party. I had prepared Butternut Squash & Chickpea Thai Curry and this was just an extra packet lying around. With this recipe, I put it to good use. In a mixing bowl, add all-purpose flour
, minced green chillies, garlic, ginger, cooked butternut squash, cilantro and salt. Mix and mash the mixture.
To make the batter, you can add water but I chose to add freshly made buttermilk (yogurt + water). It just gives it so much more punch and flavor. Add turmeric powder to give the crepes a nice orange-yellow tinge which comes with health benefits as well. Then add grated cheese especially if you are making for children. It really tastes great. Mix it all together. You could make crepes instantly but I chose to keep it refrigerated for around 30 minutes. Heat the mini pancake pan, using a small spoon pour the batter in the molds. Drizzle oil around if required. Let it cook for a minute or 2. Flip and cook the other side similarly.
Mini Butternut Squash Fritters/Crepes are ready! Serve it with any ketchup or chutney. I served this to my friend and her daughter who initially were a bit skeptical in trying it out and later made me make a whole batch of crepes just because. They even insisted on having the same thing the next day as well. This speaks volumes about this dish and should tempt you enough to try it out yourself. These crepes are soft, palatable and nutritious. Ideal recipe for breakfast or as an evening snack.

Ingredients
- 1 cup all purpose flour
- 2-3 green chillies
- 2 cloves of garlic
- Half inch ginger
- 1 cup chopped butternut squash cooked
- 1/3 cup cilantro/parsley
- Salt as required
- 1 tsp turmeric powder
- Buttermilk as required to make batter
- Grated cheese as desired
