KR loves coconut water as it is so refreshing. It also has health benefits. My dad would have coconut water once a day after his operation. In fact, even my SIL had it everyday during her pregnancy. You can find vendors on nearly every street selling it especially in Summer. Best natural drink ever!
We had got some coconuts to make coconut chutney for idli. That is how we got some fresh coconut water from which we reserved for later use as KR loves to drink it. However I wanted to use it in some recipe. Pinterest did give me some ideas and I decided to go with it. A smoothie recipe was long due and what better way than to make it vegan using coconut water! If you have seen my Instagram stories, you would know how much we love our smoothies. Its our breakfast everyday and I try to make it different every time just to make it more fun.
Vegan Coconut Water Berry Smoothie is ready! Enjoy it for breakfast and proceed to have a great power packed day. With the first sip of this lip smacking smoothie, I was transported to my home town. It got back all those growing up memories of dad sharing his coconut water with us. In the beginning, I would really not like it that much but did not have the heart to tell him as he was recuperating. However over time, I began to enjoy it. When travelling to South during our Summer vacations, this was the best natural drink to quench our thirst in the afternoons.
- 2 cups coconut water
- 1 tsp chia seeds
- 1 tsp honey
- 2 tbsp protein powder
- 1/2 cup mixed berries
- Ice cubes (optional)
- Here is a recipe that will totally wake you up! In a blender, add coconut water, chia seeds, honey, protein powder and mixed berries. Blitz to make a smoothie. You may add ice cubes as well.
