December is the most festive time of the year! Everyone is in a good mood. The holidays are coming up and gatherings/parties are being planned. Families visit one another and Christmas cheer spreads its magic all over. Every family has a holiday tradition that brings the family together and helps create memories for the years to come. The holiday season is also one of the busiest time of year – from parties, shopping for gifts to traveling, it can get pretty hectic sometimes! The idea is to slow down and savor this special time of the year with loved ones.
There is one tradition that I vividly remember while growing up. Even though Christmas is not a Hindu festival, we had Christian friends who lived close by and so we always celebrated it even if it was in a small way. My dad would get chocolate cake for us every year and my mom would buy us a new dress from her personal savings. My brother and I looked forward to this ritual every year. I try to keep this tradition alive now in my own way by cooking something special on Christmas day. KR also gifts me something for Christmas each year :). While this has become our family tradition, we do celebrate Christmas along with our friends, especially for the children in our group.
Every year one of the families in our group organizes a potluck and we all hang out at their place and have loads of fun. There is lots of good food, great wine, jokes and a Secret Santa game that keeps the day filled with laughter and cheer. Since about half of us in the group are vegetarian, our potluck menu is a very interesting mix of vegetarian and non-vegetarian dishes. This occasion gives me an opportunity to experiment with new recipes and get instant feedback from my friends. I enjoy creating party appetizers the most as it’s the most popular item on any menu. My dish for this year’s party is called Veggie Pizza Waffle. Waffles and Pizza are loved by all and I decided to fuse them together to create a fun party super food . 😉
I usually use tofu as stuffing – but this year I wanted to try something different, so I decided to go with MorningStar Farms® Chipotle Black Bean Crumbles™ for the stuffing. They can be easily found in the freezer aisle in Walmart.
Our family has been vegetarian for generations. While one of the challenges of being a vegetarian is getting the required amount of protein, we have found ways to do it. We regularly consume veggies, lentils, tofu, edamame, legumes, yogurt and sometimes even eggs as part of our diet. Also, one of my more enjoyable pass-times is converting meat-based recipes to meatless ones for my friends and readers. MorningStar Farms® Chipotle Black Bean Crumbles with its blend of bold southwest spices, and 8g of protein per serving, seems to be both, a good source of protein and a flavorful meat substitute.
With just a few simple ingredients, you can make your very own Waffle Pizza in just a few minutes! No need to turn on your oven or call the delivery guy — it’s that simple!! First we need to prepare the pizza sauce using some juicy tomatoes. In a pan, add coarsely chopped tomatoes, garlic powder, onions, dried basil, oregano, pepper, salt and little water. Saute it until the tomatoes turn mushy. Use a hand blender to give it a sauce-like consistency. Check and adjust the seasoning as per individual taste. You can prepare this pizza sauce in advance and store it in an airtight container (please refrigerate). The next step is the Pizza Waffle.
The recipe I have for you today can be made for breakfast, as a snack and even be served as a party food. Prepare the MorningStar Farms® Chipotle Black Bean Crumbles™ as per the instructions on the packet. Though I tried both the microwave and skillet method, I would strongly recommend the latter – it brings out the flavor of the crumbles a lot better. Once the crumbles are ready, take a piece of pre-cut biscuit dough and stretch it out. Spread the homemade pizza sauce over it. Then add the MorningStar Farms® Chipotle Black Bean Crumbles™ on top.
Now it’s time to add the veggies. Add chopped onions, bell peppers and corn (you can choose whichever veggies you like) and top it with grated pizza cheese. You may sprinkle salt and pepper on top if you so wish. Seal it with another flattened pre-cut biscuit dough. Lightly press around the edges to ensure its sealed properly. Place it in a waffle maker and close the top on your waffle iron and cook for about 3 – 4 minutes, or until the dough is golden brown.
Take it off the waffle maker and serve warm with some chutney/ketchup. I will tell you, my mind was blown away by the taste!! KR loved the waffles too and deemed them an instant crowd pleaser! The best part was the ease of preparation. We thoroughly enjoyed these deliciously cheesy pizza waffles for dinner and I plan to make this again for my Christmas potluck this year. I’m know for sure that this dish will tickle the taste-buds of both my vegetarian and non-vegetarian friends and they will all love it. The crumbles inside enhance the flavor of this dish so much – You have to taste it to believe it!!!

- 1 tin pre-cut biscuit dough
- 1 packet MorningStar Farms® Chipotle Black Bean Crumbles™
- 1/2 cup onions chopped
- 1/2 cup bell peppers chopped
- 1/2 cup corn
- 1/2 cup cheese grated
- 2 tomatoes
- 1 tsp basil
- 1 tsp oregano
- 1 tsp ginger minced
- 2-3 garlic
- 1 onion
- Salt as required
- Pepper as required
- 1-2 green chillies
