If you go to Pinterest, you can see numerous images of yogurt bark. In fact I even discovered this sweet treat on Pinterest and it got me hooked. While I was making this I realized that these barks are an awesome pre/post workout treats. I always crave for interesting snacks before and after my workout. But since I do not wish to feel guilty, I munch on healthy snacks like Chickpea & Edamame Crispies or drinks like 4 Berry Chia Seeds Power Smoothie or 5 Varieties of Banana Smoothie! Now I can proudly say that I have another healthy alternate snack to munch.
These Yogurt Berry Protein Barks are so simple to make that even kids can make them. It’s a no cook/bake recipe. I love such easy recipes because they really make cooking super fun. I was highly impressed with this dessert snack for the simplicity of it. Plus its packed with protein, vitamins and natural sweetness from fruits. One can get as imaginative and creative with the recipe. Make this for your child’s next birthday party and all his/her’s little friends are sure to gleefully slurp it away. I am going to call them – A smoothie that you can bite!
Did I tell you that it takes just about 5 minutes to prepare this and then it is the job of your freezer? Now why can’t all our cooking be like this. But then people like me wouldn’t really not enjoy the process if it was all the same. This was the first time I ever made yogurt bark and all at home loved it. There are some lessons learnt for future. It would help to use flavored yogurt in the recipe instead of plain. Greek yogurt Protein helps you boost your protein levels which is essential for good health. Protein is vital to cell growth, building muscle, and repairing tissue. As one ages, one needs to consume more protein to keep your skin healthy and to fight off any illness.
Yogurt Berry Protein Bark has the goodness of protein, vitamins and fiber. Kids can enjoy it as an after meal snack or you can indulge it a midnight snack with it. Whatever is the excuse, you will surely have fun eating this bark. In a mixing bowl, whisk in the yogurt, protein powder and sugar or honey. Add in the chopped fruits, sprinkles and cornflakes. Line a baking tray with parchment paper and pour this mixture over it. Spread it flat evenly. Sprinkle some more fruits and cornflakes on top and freeze it for at-least 2 hours. Tap it lightly and release the bark from the tray. Roughly break the bark into bite size pieces.
Drizzle honey/chocolate sauce on top and serve. You can also store them in a freezer and enjoy it as and when you feel like.
The bark is mildly sweet and one can also lick it off like a lollipop. It’s surely a fun way to eat yogurt.
Yogurt Berry Protein Bark
- 2 cup flavored greek yogurt
- 1/2 cup chopped berries like blueberries and strawberries
- 2 tbsp protein powder
- 2 -3 tbsp sugar/honey
- 1/4 cup cornflakes
- Some more Honey to drizzle on top.
- In a mixing bowl, whisk in the yogurt, protein powder and sugar/honey. Add in the chopped fruits and cornflakes. Line a baking tray with parchment paper and pour this mixture over it. Spread it flat evenly. Sprinkle some more fruits, sprinkles and cornflakes on top and freeze it for at-least 2 hours. Tap it lightly and release the bark from the tray. Roughly break the bark into bite size pieces.
Use any flavored yogurt for the recipe.
Add any variety of fruits you want.
Skip the protein powder and sugar if you wish to.
I had some friends visiting us recently and I served this bark for dessert. Their kids loved it and were very intrigued by its name – Bark! An alternate way of serving this dish is dipping the tip into strawberry jam before serving. This is a simple yet tasty dish and is surely a must try!
