Zucchini and Peas Fritters is a fun way to use zucchini! These vegetarian fritters are healthy and also very tasty. Can be enjoyed as any meal of the day! We had them for breakfast and lunch the other day. I had got some zucchini from the store since I wanted to try out some dishes using it. Do check out my other recipe Zucchini & Black Bean Rice. It was a super-hit dish. This gave me more confidence to eat zucchini which I had never tried before until then.
These fritters are soft yet crispy. The flavor of zucchini and green peas really enhance this dish. I would say when you feel like having something new today, try making these. Impress your guests with Zucchini. I bet you they will not be able to guess what is in it. 🙂
2 medium zucchini
1 cup green peas
1 large onion finely chopped
1/3 cup shredded cheese
2-3 green chillies, minced
3-4 garlic cloves, minced
Oil for frying
Wash and peel the zucchini.
Grate them and sprinkle some salt over it. Set it aside for few minutes. Squeeze out the excess water from them.
In a mixing bowl, add the this, chillies and garlic.
Now add the onions, cheese and salt.
Mix lightly. Add the eggs and flour. If making it eggless, add 1/2 cup besan and little water to bind.
Mix them all together. Add the green peas.
Once again mix it all up. Check salt and add if necessary. The batter should not be runny. Add some flour if it is.
Warm the skillet. add a tsp of oil and pour a spoonful of batter. Spread it lightly to form a circle using the spoon.
Smear some more oil on all the sides. Cook both sides evenly.
Serve them with any chutney or sauce. You will need to make a couple of them because once you start eating them you will not want to stop! 🙂
