They have simple knacks to put together a quick meal with little effort. I always walk away with some recipe idea or inspiration. This time the idea came from my MIL. KR's folks were visiting us and it was good to have them here. Together we created many old and some new recipes. This was the first time they actually saw me in my food blogger element and finally understood what I do for a living. It was something new and exciting for them. For these last four months, they became my hand models and KR got a break! 🙂 They realized my need to create new and exciting recipes for my readers and were always up to trying out some new recipe along with me. One morning, my MIL came up to me and told that she was making Capsicum Rice for lunch. I had never heard of this rice dish and was inquisitive. After watching her prepare it and then devouring it, I realized that this rice recipe had to be shared with all!
In fact, I did a fun poll on my Instagram story asking whether you want me to share this recipe and guess what, it was a 100% yes! I told my MIL that her recipe seems to be a hit and we decided to make it again for the blog. Being a rice lover, after appetizers, my eyes always search for a rice dish at any party! If there is rice served, then I am set. That is why rice recipes are very personal to me. I love the fact that cooking something with rice is so easy and quick too. It is filling too if one doesn't mind the carbs once in a while. Dishes like this Bell Pepper Fried Rice can be served at any party, packed in lunchboxes or can be enjoyed on a weekend/weeknight. It is that versatile. As it is, bell peppers are very flavorful but adding them to rice takes the taste to another level. I am so glad my MIL shared her recipe with not just me but all of you. There are two versions of this Bell Pepper Fried Rice that she makes. One is without adding onions and garlic (for days when they can't consume it in their diet) while the other is with them. I have tasted both the varieties and they both taste great.
Today, I will share the recipe with onions and garlic. I have used pre-cooked rice for this recipe. But you can cook the rice along with all the masala on the cook-top or an Instant Pot like you would for any other rice dish. Here is what you need to do to make Bell Pepper Fried Rice! Heat oil (if vegan) or ghee in a pan. Fry cumin seeds for 5 seconds, then fry minced ginger and garlic for 45 seconds. Next add curry leaves and sliced onions. Saute till the onions turn translucent. Then add sliced bell peppers and green peas. Continue to saute for 2-3 minutes or until the bell peppers are cooked. Now add the spice powders like turmeric powder, paprika, cumin powder and curry powder along with salt. My MIL makes the curry powder at home and I promise to share her recipe with you soon. But you can use any curry powder available to you. Mix and cook the masala for one more minute. Then add the cooked rice. Mix it all together so that the masala coats well with the rice. Garnish with chopped cilantro. Serve warm along with some raita/yogurt dip. You can also serve it with a side of Mirchi Ka Salan.
Bell Pepper Fried Rice
- 2 cups raw white rice cook it and keep it aside
- 1 tbsp cooking oil/ghee
- 1 tsp cumin seeds
- 5-6 cloves garlic
- 1/2 inch ginger
- 1 onion
- 6-7 curry leaves
- 2 Bell Peppers
- 1/2 cup green peas
- 1 tsp turmeric powder
- 2 tsp cumin powder
- 1-2 tbsp curry powder
- 1 tbsp paprika
- salt as required
- 2-3 tbsp chopped cilantro for garnish
- Heat oil (if vegan) or ghee in a pan.
