Indian style veggies stir fry is a delicious and easy South Indian recipe that can be served as snacks or side dish for rice. This is a quick recipe that can be prepared in minutes. The cooking style is more earthy and rustic making it a little different than the other stir fries. Vegan friendly, Paleo and Gluten free!
You know you have gained some brownie points in your family when everyone contributes to your blog in some way or the other. My SIL keeps hunting for food props in Dubai (where she stays) for me. She will send me pictures for me to approve of and buy them. My MIL and aunt both keep hunting for recipes and whenever they come across something interesting, they will call and give it to me. My brother and KR keep reading articles on how to grow the blog and keep giving me tips to improve. My crazy but sweet friends keep sending me pictures of their food whenever they are at any restaurant and include a message “For your Instagram!” Its become such that now whoever comes across anything that spells FOOD, they think of me! I am not complaining at all though. I LOVE it!
It was a regular day, I was going about with my routine alternating between these – Cook, Music, Netflix and work work work, when my phone rang. It was my aunt from Coimbatore (A city in South of India) who was speaking with a lot of excitement in her voice. The gist of that conversation was that she had learnt of this varuval recipe from her neighbor. When I heard of it, I was super impressed with the cooking style as its very rustic and earthy. After thanking my aunt profusely, I decided to make it for our dinner the next day. Before hanging up, she reconfirmed that I would share this recipe on my blog. I told her her that if it turns out good, I will and of course mention the source. She told me that its an old recipe that has been passed on from generations. That just made this dish extra special. I made this varuval with great expectations and thankfully they were met.
Take a wok and without turning on the heat add, chilly powder, turmeric powder, coriander cumin powder, garam masala, onion powder, garlic powder and salt. Mix them all together and then add oil to the pan. Now switch on the gas and let the oil heat up. Once you start to see little bubbles, add the mixed veggies. Sprinkle water, mix and cook it covered for 10 minutes or until the veggies are done. Add besan/chickpea flour and quickly mix it with the veggies and saute for another minute. Take it off the gas and transfer to a serving dish. Serve this varuval warm along with roti/dal and rice. I must say that I was really impressed with this dish. Never cooked anything this way and it surely was fun. You must try it out too.

- 2 tsp coriander cumin powder
- 2 tsp garam masala
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tbsp oil
- 4 cups mixed vegetables
- 2 tbsp besan/chickpea flour
- salt as required
