    What's gazpacho?

    Gazpacho is a spicy soup that is usually made from blending raw vegetables like tomatoes, onions, peppers, and cucumbers and is served cold, especially in summer. 

    It tastes super refreshing and is always bursting with fresh-from-the-garden summer flavors. It's an ancient yet popular dish from Spanish cuisine. 

    No matter the ingredients, gazpacho is considered to be a healthy chilled soup rich in minerals, antioxidants, fiber, and vitamins.

    In Spain, gazpacho can be enjoyed as a drink, an appetizer, a tapa, a dip, a sauce, as a seasoning, a starter, a main dish, even a dessert. It is eaten at any time of the day and at any time during a meal.

    I read somewhere that this chilled soup had actually originated as poor man's food and was consumed by laborers in the vineyards and olive plantations. 

    Traditionally, gazpacho was made by pounding the vegetables in a mortar with a pestle. This obviously was more time-consuming. But in some places, they still make it this way.

    It helps keep the gazpacho cool and avoids the foam and completely smooth consistency created by blenders or food processors. 

    I'm all for soups

    The ingredients, texture, and thickness of gazpacho vary regionally and between families. So you will find many recipes out there that may be different. 

    My easy vegan soup recipe today is a take on the traditional gazpacho. I have given this soup a summer twist by using mangoes along with tomatoes. Now shouldn't we be able to enjoy soups in the hot weather too?

    The majority of the ingredients needed for this cold Spanish soup recipe were sourced from iHerb. 

    California Gold Nutrition, Organic Mango, Ready to Eat Dried Slices - They are the hero ingredient in this drink recipe. They're sweet and lightly tart which is perfect for this recipe, plus they have no preservatives and no added flavors.

    Karen's Naturals, Just Tomatoes - They are just dehydrated fresh tomatoes and contain no preservatives, additives, or added sugar. 

    They are picked fresh and dried at low temperatures to preserve flavor and essential nutrients. Plus, they lend a nice tangy flavor to this soup.

    Other veggies, fruits, and herbs - cucumber, bell peppers, sweetcorn, garlic, jalapenos, oranges, cilantro, basil, and lemon juice. They make the soup more hearty and flavorful.

    Here's how to make it

    One of the simplest and easiest soup recipes!

    1. Add cut dried mango slices to a blender jar.
    2. Then add the sundried tomatoes.
    3. Next, add the roughly chopped cucumbers along with roughly chopped jalapenos and garlic. 
    4. Also, add basil, turmeric, and salt. Lastly, add the oranges and blend until smooth. Add water before blending. 
    5. Strain the mixture if you like it smooth. Transfer to a bowl, add lemon juice, and mix well.
      • Check and adjust the seasoning if needed. Store in the fridge for a minimum of two hours or till it's time to serve. 
    6. Meanwhile, chop and grill bell peppers and sweetcorn in coconut oil, and transfer them into a bowl. 
      • You can also lightly toast the 3-Seed Blend separately for a toasty flavor and transfer it to another bowl.

    Serving suggestions

    Garnish the cold Spanish soup with cilantro, grilled veggies, and toasted seeds. Serve immediately. This is the only cool mango soup/drink that you will need in this hot weather!

    This can also be served at house parties, you can also pack it in a flask and carry it with you on a picnic or a road trip.

    What to serve with gazpacho?

    This mango drink/gazpacho goes very well with any toasted bread, Pasta Salad, Cucumber Salad, or anything grilled like Masala Bhutta, Black Bean Taco Boats, Chilli Cheese Corn Toast, or Grilled Mashed Potato Sandwich.   

    Top tips, recommendations, and suggestions

    If your blender is not powerful enough, roughly chop the dried mango pieces and the sun-dried tomatoes before grinding.

    Adjust the consistency of the soup by adding more water if needed. Add half a jalapeno if one is too much for you. 

    You can also use fresh mangoes for this recipe. The consistency of your gazpacho can be smooth or chunky. It's a personal choice. 

    Also, add some croutons or nuts as toppings. You can also drizzle some yogurt or sour cream on top. Remember to chill the soup for at least 2 hours for the flavors to develop, before serving. 

    How to store it?

    It stays well in the fridge for 4-5 days. This easy vegan summer soup can also be made ahead and frozen. Defrost in the fridge overnight.

    Got leftovers?

    Use this cold Spanish soup as a pasta sauce! Cook pasta, saute some veggies, and add this soup as a pasta sauce. Then toss the cooked pasta in it, mix, and serve!

    You can also use it as a dip, add it to stews, curries, and cook grains in it along with water.

    Ingredients 

    Soup

    • 100 gms California Gold Nutrition, Organic Mango, Ready to Eat Dried Slices
    • 10 gms California Gold Nutrition Karen's Naturals, Just Tomatoes
    • 2 mini cucumbers
    • 1 jalapeno
    • 3 cloves garlic
    • 2 tbsp chopped basil
    • 1 tsp California Gold Nutrition Organic Turmeric, California Gold Nutrition
    • 1/2 tsp salt
    • 2 cups chilled water

    Grilled veggies

    • 1/2 bell pepper
    • 2 tbsp sweetcorn
    • 2 tbsp Premium Organic Extra Virgin Coconut Oil

    Toppings

    • 2 tbsp cilantro
    • 1 tbsp Unrefined, Cold-Pressed Organic 3-Seed Blend

    Instructions

    Soup

    • Add cut dried mango slices to a blender jar.
    • Then add the sundried tomatoes.
