Wash the apples well and chop them finely using a chopper, no need to peel. Transfer the chopped apples to a bowl and add lemon juice. This prevents it from browning.
In another mixing bowl, add softened cream cheese, sour cream, and sugar. Beat until fluffy. Then strain the apples and add them to this bowl along with chopped pistachios.
Combine the mixture then portion into small bowls or glass jars. Place them into the refrigerator and allow them to chill for 2 hours.
