Heat oil in pan and sauté the minced garlic.
Next, add the bread crumbs once the garlic is slightly burnt. Toss it for 5 minutes. The crumbs will become crispy.
Remove from flame and add parsley.
Next, add the vegan parmesan cheese and pepper.
Mix and set aside.
Cook pasta until al dente and set aside.
In the same pan, add olive oil and sliced mushrooms.
Next, add the edamame to the pan with the mushrooms. Sauté for a couple minutes.
Next, add salt, red pepper flakes and Italian seasonings. Sauté for an additional 2 minutes.
Next add the cooked pasta and mix lightly. Lastly, add the bread crumbs mixture, toss them all together, & cook for another minute.
