In the Instant Pot

Turn on the Instant pot in sauté mode. Next, add vegan butter to the pot.

Once the pot beeps, add cumin seeds, ginger, garlic, onions, & serrano peppers. Sauté for 30 seconds.

Next, add the chopped tomatoes. Cook until the tomatoes are soft.

Next, add the veggies like beets, carrots, green peas, & green beans. Mix & cook for 30 seconds.

After that, add the potatoes and cauliflower with the turmeric. Add veggie stock or water and mix together.

Turn off sauté mode & close the IP with its lid. Cook in manual mode for 6 mins with the valve sealed.

Release the pressure manually & open the lid. Mash the mixture using a potato masher.

Turn on the saute mode & add crumbled tofu, pav bhaji masala, chilly powder,  & salt if needed.

Garnish with red onion slices, chopped cilantro, and freshly squeezed lemon juice.
