MANGO GAZPACHO | SUMMER SOUP

First, add the cut dried mango slices to a blender jar. You can also use fresh mangoes if you would like.

Next, add the sun dried tomatoes into the jar with the mangoes.

Then, add the roughly chopped cucumbers along with roughly chopped jalapeños and garlic.

Also, add basil, turmeric, and salt. Lastly, add the oranges and blend until smooth. Add water before blending.

Strain the mixture if you like it smooth. Transfer to a bowl, add lemon juice, and mix well.

Check and adjust the seasoning if needed. Store in the fridge for a minimum of two hours or till it's time to serve.

Meanwhile, chop and grill bell peppers and sweetcorn in coconut oil, and transfer them into another bowl.

You can also lightly toast the 3-Seed Blend separately for a toasty flavor and transfer it to another bowl.

Garnish the cold Spanish soup with cilantro, grilled veggies, and toasted seeds. Serve immediately and enjoy!
