Vegan Almond Flour Cookies

In a mixing bowl, add almond flour.
Add jaggery powder along with salt, baking powder, nutmeg powder, and cardamom powder.
Add oil.
Knead to make a dough.
Fill small silicone molds with the dough. You can also shape them into small balls and flatten them slightly using your hands.
Coarsely crush almonds, pistachios and cashews.
Sprinkle them along with saffron strands over the balls.
Transfer to a lined baking tray. Bake at 350 degrees F for 15-20 minutes. Allow it to cool for few minutes before consuming these cookies.
