Chinese Scallion Pancake

Chinese Scallion Pancake is a popular Chinese delicacy served for breakfast. The batter version is the simpler and quicker version to make these vegetarian pancakes. The scallions in the pancake give it a nice flavor making it a filling breakfast meal.

INGREDIENTS

  • 2 cups all purpose flour
  • 1 tbsp Chinese Five Spice Powder
  • 1 bunch of scallions
  • Salt as required
  • Water as required
  • Oil for cooking.

INSTRUCTIONS

  • Sieve all purpose flour in a mixing bowl. Add Chinese Five Spice Powder and salt. Add water to give it a batter consistency. Add chopped scallions (green onions) and whisk it all together. Warm a skillet and pour a ladle full of batter on it. Drizzle some oil around it and let it cook for a minute or two. Flip to the other side and let it cook evenly for a similar time. Once both sides are cooked, take it off the pan, cut it in wedges and serve hot.
NOTES
Skip adding the Chinese Five spice powder if its not available. It tastes fine even without it. Also an easy way to make a substitute for Five Spice Powder is to mix equal parts of anise, cinnamon, clove, fennel and Szechuan peppercorns. It is also common to include black pepper and ground ginger.
