Ingredients

  • 1 cup nut butter
  • 1 cup oats powder
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • ¼ cup brown sugar
  • 1 tablespoon water
  • 2 teaspoon instant coffee powder
  • 1 tablespoon chocolate syrup optional

Instructions

  • In a mixing bowl, add nut butter.
  • Whisk to soften it. Add baking soda and salt.
  • Now add the oats powder.
  • Then add the brown sugar.
  • Add 1 tablespoon water to instant coffee powder. Mix it till it dissolves
  • Add Instant coffee to the bowl.
  • Whisk them together. Mix and knead to make a dough. Do not knead too much, just till a big ball shape is formed.
  • The nut butter will release its oil and help in the process. Line a cookie tray with parchment paper. Shape them into small balls, flatten them lightly and create an impression using a fork. Place them at a distance on the cookie tray. Preheat the oven at 350 degrees F. Place the tray on the top rack and bake for 10-12 minutes.
  • The cookies will appear not done, but that is fine. Take them out and let it rest for 10 minutes. Drizzle chocolate or coat half the cookie in chocolate if you want. Then serve.

Notes

If the dough is very sticky, add some oats powder and if it is too dry, add some milk or apple sauce.
