1tspoil - 3 tbsp sesame seeds, 1 tbsp peanuts, 1/3 cup cashews, 4-5 garlic cloves, half inch ginger
Milk - optional
Cilantro for garnish
Butter for taste
In a pan, first saute roughly cut onions in oil till it gets golden and translucent. Take it out onto a plate and in the same pan, saute bell peppers in oil. Once they get a charred look, take it out onto another plate. Continue to use the same pan to roast white sesame seeds, garlic, ginger, peanuts and cashews in oil. Then add chopped tomatoes to it and continue to saute till the tomatoes get soft and pulpy.
Grind the roasted onions to a smooth paste. Next grind the tomato sesame mixture to a smooth paste. Cut paneer in cubes and add it to a bowl of warm water. This is done to retain the softness of the paneer. Heat oil in the pan and temper cumin seeds. Add chilly powder and onion paste. Fry for two minutes and then add the tomato paste. Continue to fry for another two minutes. Then add the grilled bell peppers and salt. Mix and saute for another minute or two. Add the paneer cubes before serving.
Mix it lightly so that the paneer doesn't break. Add butter (generously) on top and sprinkle cilantro on top for garnish and serve with any naan.
