INGREDIENTS

  • 1 cup chopped butternut squash
  • 1 onion sliced
  • 1/2 cup frozen edamame
  • Garlic powder and salt as required
  • Oil for roasting - optional
  • Dry spice mix
  • 2 tsp chilly powder
  • 1 tsp amchur powder
  • 2 tsp coriander cumin powder
  • 1 tsp turmeric powder
  • 1 tsp cooking oil
  • 1 tsp mustard seeds
  • 4-5 fresh curry leaves
  • 2-3 green chillies - minced
  • Salt as required
  • Cilantro for garnish

INSTRUCTIONS

  • In a grill pan, dry roast or roast with little oil, chopped butternut squash, sliced onions and edamame separately. Sprinkle garlic powder and salt while roasting. Take it out in a bowl. Prepare a dry spice mix by adding chilly powder, turmeric powder, amchur powder and coriander - cumin powder in a mixing bowl. Heat oil in a wok. temper mustard seeds. Once they crackle, add curry leaves and green chillies and fry them for a minute. Now add the grilled veggies along with salt. Continue to fry the veggies for another 2 minutes. Then add the dry spice powder mix. Mix well and saute for a minute. Take it off the flame. Garnish with chopped cilantro. Serve warm.
