Soy and Sweet Potato Burger Bowl

INGREDIENTS

  • 1/2 packet soy nuggets
  • 1 tsp turmeric powder
  • Salt as required
  • 1 sweet potato
  • 1 potato
  • 1 tsp turmeric powder
  • Salt as required
  • 1 large onion
  • 2 cloves of garlic
  • Half inch ginger
  • 2 green chillies
  • 1 tbsp oil
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp cumin powder
  • Salt as required
  • 1/3 cup chopped cilantro/parsley
  • Bread crumbs/semolina as required
  • Oil for grilling
  • Grilled veggies as desired
  • Lettuce leaves

INSTRUCTIONS

  • Boil soy nuggets with salt and turmeric powder for 10 minutes. Drain the water, allow it to cool and squeeze out the water fully. Coarsely grind it and keep it aside. Boil sweet potato and potato along with salt and turmeric powder. Cool, peel and mash lightly. Keep it aside for now. Make a paste of onion, garlic, ginger and green chillies.
  • Heat oil in a pan, fry the onion paste for 2-3 minutes. Then add the ground soy, turmeric powder, paprika,cumin powder and salt. Mix and saute for 4-5 minutes. Then add the mashed potatoes and continue to cook for another 2-3 minutes.
  • Add chopped cilantro and give it a final mix. Take it off the flame and let it cool a bit. Divide the mixture into equal parts. Make balls out of the mixture and then flatten it to form patties. If you are unable to make balls, add bread crumbs to the mixture. Roll them over bread crumbs/semolina and grill them.
  • Ensure that the patties are cooked evenly on both sides. Grill some veggies like bell peppers, onions, broccoli and tomatoes with some garlic powder and salt. In a serving bowl, add a lettuce leaf, grilled veggies and soy and sweet potato patties. Add a generous amount of hot sauce and fat free cheese on top and serve warm.
NOTES
You can add cooked brown rice to this mix to make it more filling.
