Soya Methi Pulav | Soy Fenugreek Rice

Soya Methi Pulav or Soy Fenugreek Rice is a delicious rice preparation made with methi leaves and soya nuggets. This rice dish can be served as main course along with some raita.

INGREDIENTS

  • 2 cups soya nuggets
  • 1 up methi leaves
  • 1 tsp turmeric powder
  • 1 large onion
  • Half inch ginger
  • 3-4 cloves of garlic
  • 3-4 green chillies
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 tbsp black sesame seeds
  • 1 tbsp coriander cumin powder
  • 2 cups rice
  • 1-2 tsp garam masala
  • 1 tbsp dried methi leaves
  • Salt as required

INSTRUCTIONS

  • First we need to cook the soya nuggets. Add them to boiling water along with salt and turmeric powder. Let it stay for 10 minutes. Drain and squeeze out the water from the nuggets. Thaw the methi leaves. Prepare a paste of onions, garlic, ginger and green chillies. Heat ghee in a pan.
  • Temper cumin seeds and black sesame seeds. Once they crackle, add the onion paste and fry for 2-3 minutes till the paste is cooked. Then add the thawed methi leaves and salt to the pan. Mix and let it cook for 2 more minutes.
  • Then add coriander cumin powder and soya nuggets to the pan. Mix it and continue to saute  for another minute. Add cooked rice to this and bring it all together. Adjust salt and pepper as required. Lastly garnish with garam masala and dried methi leaves.
  • Soya Methi Pulav is ready. Take it off the pan, drizzle some ghee on top and serve it warm with some roasted papad and pickle.
